Pide has a lovely golden-brown colour crust and a great topping combination (apples, cheese, onion and mustard).

When looking for a new snack, make sure to try this cheesy apple pide. This, super fun to make, soft and golden-brown flatbread is just one of the variations. In fact, the combination of apples, cheese, onion, parsley and mustard isn’t a classic yet simply amazing. It is a wonderful lunch idea, too.

The other day my boyfriend and I have been reading magazines, again. And we have seen an article about “pide”. Pide is a traditional food in Turkey. Basically, it’s a flatbread similar to pita bread or pizza crust. Pide can be stuffed or eaten plain.

Moreover, the most popular ones are stuffed with spinach, feta or seasoned lamb. Through the years plenty variations were created and spread through the whole country. Consequently, it comes with unlimited toppings. For example, cheese, leafy vegetables, prawns, different fruits and all types of meat can be combined however you like it most.

Pide is ideal for lunch or a snack. Sounds great, right? Therefore, we decided to give it a try. We made a list of toppings we wanted on it; our choices were red onions, apples and of course cheese. In other words, we tried to have all of the flavours and textures: crunchy, soft, gooey, fresh, baked, sweet and spicy.

Mustard, olive oil and butter

More, one of the important ingredients, which makes this cheesy apple Pide so delicious, is spicy mustard. Spicy mustard has a strong and sharp flavour, which goes perfectly with sweet and cheese. It will make your taste buds dance, I promise.

In addition, I’ve read that traditionally they leave the dough to rise 12 hours before baking it. Another typical thing is that they use only butter; it is the “king” of the ingredients. Wink. Despite all this, my perfect Pide dough only needs one hour rest.

Also, I only used butter for brushing the dough after being baked. As a result, the dough will stay soft and shiny. Therefore, make sure you don’t skip this step.

Making this recipe is easy and quick. Also, once you master the dough, you’ll make Pide and other creations every weekend if not every day. For instance, you can make wonderful salty or cheese breadsticks. And when you’ll eat it you’ll feel like being in Turkey. Wink.

Ingredients for two portions of cheesy apple pide:

  • 2/3 package of dry yeast (ca 5 g)
  • 1 tsp sugar sugar
  • 100 ml milk (room temperature)
  • 250 g flour
  • 2-3 tsp of salt
  • 25 ml of water
  • 20 ml of olive oil
  • 1 egg (beaten, for brushing before baking)
  • 30 g butter (softened, for brushing after baking)
  • 1 red onion (sliced)
  • 2 apples (cubed)
  • 200 g cheese (Brie, cubed)
  • 4-5 Tsp of mustard (half is to spread on the dough)
  • juice of 1/2 lime
  • fresh parsley (for garnish)
  • black pepper

First, it is time to make bread or the base. In a cup, combine milk, dry yeast and sugar. Stir it with a spoon and put in a warm place. Usually, I put it in the oven, with only the light on. That’s about 30-40 °C.

Then, in a larger bowl, combine flour and salt. Once the yeast mixture starts forming bubbles, pour it into the flour bowl. Last but not least, pour in the water and olive oil. Using a spoon, stir until everything is roughly combined.

At this point, use your hands to amalgamate well all of the ingredients and to form a ball. Then, transfer the dough on your working surface (which you drizzled with some drops of olive oil rather than dusted with flour) and knead for 7 minutes or until elastic and smooth.

Once the Pide dough gets smooth, form a ball and place it in a bowl greased with some olive oil. Moreover, cover the bowl, first with cling film foil and then also with a kitchen towel. In order to let it double its size, place it in the oven with only the light on for about 1 hour.

Apple, onion, mustard and cheese

Meanwhile, slice the onion and cut the apples and cheese. Place apples and onions in a medium bowl sprinkle with some lime juice, pepper and stir in half of the mustard. Give it a good stir and leave aside. Quick as I said it would be.

When you see that the dough is like a big fluffy pillow, then it is ready. Flip the dough on the working surface and divide in half. Again, I used olive oil to prevent the dough from sticking. When rolling out the dough, try to make an almost oval shape (about 35×25 cm). It doesn’t need to be perfect.

Moreover, flat the dough down to about 3-5 mm and carefully transfer it on a parchment paper on a baking sheet. Also, preheat the oven to 200°C. At this point, spread one spoon of mustard over the dough (leaving the 2 cm around the edge) and top it with half of the apple onion mixture, spreading it evenly around the dough.

Finally, add the cheese and fold the edges inwards. At the same time, pinch or fold the two ends to form a boat or and eye shape. Do the same with the second cheesy apple pide.

Before baking them, quickly brush the edges with an egg. then, put them in the oven and bake for about 20 minutes or until they get a lovely golden-brown colour.

In conclusion, take the cheesy apple pide out of the oven and spread some butter over the dough straight away. Then, sprinkle with some fresh black pepper and add some fresh parsley on top. Pide tastes best when warm and steamy. You can serve it on a cutting board or cut it like a pizza. Your friends will love it.
