Grilled salmon with avocado mayo

Are you looking for a quick supper or lunch recipe? I have this lovely and delicious grilled salmon with avocado mayo for you. It is a perfect week supper, when you come home late, tired and hungry.

Moreover, it is super easy to prepare and you’ll have it on your plate in no time. Oh boy, I love salmon! You, too? I don’t know why. Maybe because it’s very tasty, tender and moist. However, salmon is one of my top fish picks.

Along with this amazing, healthy fish, I prepared a smooth avocado mayo. Simply mix together avocado, shallot, cilantro and at the end add the creamy mayo. It is like making guacamole, but with a twist. You are going to adore it.

Furthermore, I always thought an egg goes perfectly with almost everything, also with fish. It doesn’t matter if it is a boiled egg or a sunny side up egg. I LOVE the runny egg yolk! Yes! That’s the jackpot!

Ingredients for one serving of grilled salmon with avocado mayo:

  • half avocado
  • 1 shallot (finely chopped)
  • cilantro (roughly chopped)
  • juice from half a lime
  • olive oil (1Tbsp for mayo, and some for the salmon)
  • salt, pepper
  • 1Tbsp mayonnaise
  • 300 g salmon fillet
  • 1 egg

There are three things to prepare: mayo, salmon and egg.

First, place the avocado, lime juice, cilantro, salt and olive oil into a plastic container and purée it. Once you get your desired consistency, add the mayonnaise and shallot and mix to combine. Then place it in the fridge.

Second, rub some olive oil over the salmon fillet. Once the pan turns hot, place the salmon (skin down) in it. Oh yeah, I love the crispy skin! Keep it like that for 3-4 minutes without flipping it. Make sure that the skin gets really crispy.

Third, while waiting for the crispy salmon skin, put the egg to boil. For a soft boiled one, 3-3,5 minutes should be enough. It also depends on the size of the egg. Another tip, how to prevent to get an overcooked egg. Simply put them in cold water, in order to stop the cooking process. Anyway, you can also make a sunny side up egg, if you prefer.

How to do the crispy skin check? When you “knock” with your finger on the skin, you should hear a sound. Do you hear it? Well, then it is time to flip the fillet and leave it for a couple of minutes and not longer.

Finally, you are ready to eat. This grilled salmon with avocado mayo and a delicious egg will satisfy your hunger. Sprinkle with some black pepper to give even more flavour to the dish.
