Overnight oats and chia pudding

Overnight oats and chia pudding is a great breakfast idea to help you start a new day. It’s nutritious and very simple to prepare. The combination of oats, chia seeds, plain yogurt, some coconut milk, cinnamon and fresh passion fruit is incredibly delicious.

This recipe is quick and super easy. It is not even a recipe, so quick it is. However, I made a recipe out of it. Maybe, you’d never come up with this idea. Anyway, if you know it, great, if you’ve never tried this before, you are welcome to read this post.

It really can’t be an easier recipe than this one. All you need is a Mason jar, rolled oats, chia seeds, some coconut milk, yogurt and a topping. It really takes you about 2 minutes to mix together and place in the fridge. The next morning you just pick your favourite toppings, such as any of the fruits in this world, and you are ready to go.

Just look at these ingredients! So delicious! I mixed Greek yogurt and coconut milk, because I wanted a creamy and coconut flavour. You can use any yogurt you like or milk, too. However, I prefer Greek yogurt. It’s extremly creamy, rich in probiotics, protein and calcium and most importantly, makes you feel full.

Regarding coconut milk, I always like to use canned coconut milk. Why? It’s creamier than the one in the carton. That’s my only reason. Wink. Combining both, yogurt and coconut milk, you get a creamy, silky and tasty mixture.

Furthermore, rolled oats and chia seeds will absorb the moisture and expand. As a result, the milk-yogurt pudding will get even creamier and thicker. Delicious.

Passion fruit

In addition to the coconut flavour, I picked an exotic flavour. Passion fruit pairs great with coconut flavour. This fruit has an egg shape and it comes in darker purple colour (those in yellow colour are called maracuja), while the inside is packed with yellow-green edible seeds and pulp.

Also, you should always pick the ones that are slightly wrinkled. That means they are ready to be eaten. I also shake it near the ear. You know, like the Kinder Surprise egg. Wink. Like that, I can hear any movement of the inside liquids. A lot of liquids means you will get a nice surprise, more of the sweet fruit.

And did I mention the aroma? Mmmmmm, amazing. It’s a tropical mix. Passion fruit can be used for million things: cakes, cheesecakes, ice creams, smoothies, cupcakes, cookies, jams, juices and of course it can be eaten as a normal fruit.

So the best passion fruit is not perfect. It is wrinkled, purple and with an amazing aroma.

Ingredients for one portion of overnight oats and chia pudding:

  • 30 g rolled oats
  • 20 g chia seeds
  • 10 g shredded coconut
  • 150 g Greek yogurt
  • 100 g coconut milk (canned)
  • half a tsp of cinnamon
  • 1 drop of vanilla paste
  • 2 passion fruits

To begin, in a bowl mix yogurt, coconut milk, cinnamon, vanilla, shredded coconut, rolled oats and chia seeds. Stir well to combine. Place the bowl in the fridge overnight.

Good morning. Finally, it is time for a healthy breakfast. Fill the Mason jar with a couple of spoon of pudding and add half or whole passion fruit. Simply cut the passion fruit in half and scrape out the pulp and the seeds.

Then, fill up the jar with the remaining pudding and top with some more passion fruit. Overnight oats and chia pudding topped with passion fruit makes a wonderful, fruity, creamy and fulfilling breakfast.
