Puff pastry hearts

Puff pastry hearts must be the easiest treat ever. Light puff pastry filled with creamy and light Diplomatic cream and fresh sweet strawberries. They are the perfect dessert for a romantic occasion., either for Valentine’s day or any other day.

Are you looking for a romantic and cute dessert? If you are reading this, you’ve found it. Wink. Everyone needs a small sweet happy moment, right? It doesn’t need to be something big, fancy and difficult to make. More important is that it comes from the heart. And when you get a sweet heart made from the heart, well, that’s super special.

I found this recipe on a food blog of authentic Persian recipes. First I loved the looks, then I read it and found out how simple it is. I did some minimal changes to Maryam’s recipe; a little different filling and I added fruits.

Surprise your sweethearts and friends or treat yourself with these amazing puff pastry hearts. The recipe is easy to follow and it will take about 15 minutes of your time.

Store-bought puff pastry is just amazing. You unroll it, pop in the oven and it’s done. Wonderful. Well in this case, you’ll need to cut out some heart shapes.

But the special thing about this dessert is the filling. In fact, I am talking about the Diplomat cream, a combination of pastry cream and whipped cream. Oh wow. You’ve been missing out if you haven’t tried it yet. Also, check these small cherry Charlotte cakes or the Bled cream cake, as well.

Ingredients for 2 puff pastry hearts:

  • 1 puff pastry roll dough
  • 50 ml of milk
  • a drop of vanilla paste
  • 10 g sugar
  • 1 egg yolks
  • 6 g flour type 00
  • 1 g gelatine (leaf)
  • 20 ml whipping cream
  • 1 tsp of icing sugar (plus some for dusting)
  • 3 strawberries or any other fruit

To begin, prepare the filling. In a saucepan, combine milk, sugar, vanilla, egg yolk and sifted flour. Cook on a low heat and stir with a whisk until thick and smooth. Once it has a lovely pudding consistency, remove from the heat and stir in the soaked and drained gelatine. Cover and leave to chill.

Then, whip some whipping cream. After the pastry cream is chilled combine it with the whipped cream and place in the fridge.

Furthermore, take the puff pastry roll out of the fridge and preheat the oven to 1800º C. Then take a piece of paper and draw a nice heart on it. This will be your base for the puff pastry hearts.

My heart form was about 10 cm big. Cut the heart form out and unroll the dough. Place the heart form on it and cut it out with a knife, following the heart silhouette. Do this two times, in order to get two hearts out of the dough (use the rest of the dough for something else).

Place the hearts on a baking sheet lined with parchment paper and put to bake for 7-10 minutes. Once the hearts are golden brown, remove them from the oven and let them cool completely. Meanwhile, wash and slice two strawberries.

Next, cut open each heart in order to open them like a book. Fill the piping bag (with a star nozzle) with the cream and pip it nicely on two base heart pieces. Place the strawberry slices on top, add some more cream and place the top heart on top.

Finally, sift some icing sugar over the puff pastry hearts and serve some more fresh strawberries along with it. A wonderful treat for who wants a light and fluffy dessert.

    • Hi, Vanessa or Suzanne, not sure 🙂 But anyway, you can make the cream up to 5 days ahead. The store-bought puff pastry needs only 5 minutes in the oven, therefore you can make that on the same day, if not on the same hour. 😉 I hope I answered your question.
