This is an easy prosciutto/bacon wrapped green asparagus recipe which makes a delicious side dish. Asparagus is a spring vegetable that contains a lot of vitamins (B, C, E and K; almost the whole alphabet) and more than 90% is water. It is low in calories and low in sodium. Perfect for a light meal. But a plus in this recipe is the prosciutto or bacon. Make this “Asparagus with bacon scarf” and enjoy the spring food.
The two ingredients are:
- 20 green asparagus
- 10 slices of bacon/prosciutto
Wash the asparagus and remove the bottom woody ends.
I blanched the asparagus first because they were thick. Put some water in a large pan, add the asparagus and bring the water to boil. Boil for 3-4 minutes and transfer them to a bowl with ice-cold water for 1 minute. This will stop the cooking process.
Take them out of the water and start wrapping the bacon around them. I took two asparagus at a time, but you can also take three or four. Take a pan, melt one tee-spoon of Ghee and place the bundles in it. I put in five and five. After a couple of minutes or when the bacon turns crispy, turn them and wait that they are evenly done.
Serve the asparagus with bacon scarf warm with some dip or just simply like that. They taste amazing. You can use them also as a side dish for Easter. Now it is the right season for asparagus.
