Baked trout is already delicious, BUT crispy bacon-wrapped rainbow trout is a real food sensation. With only five ingredients and within 30 minutes you can have this wonderful rainbow trout on your table. Crispy skin, crispy bacon, vibrant green beans and sweet garlic are the reasons you are going to love this fish recipe. It’s perfect either for dinner, Sunday lunch or a summer grill party.
I like preparing the whole fish as well as the fish fillets. However, preparing the whole fish is more fun. In addition, you can’t rush eating the whole fish. First, you need to clean it, by removing the bone skeleton. Once you learn how to debone a fish, it will take you less than a minute. By the way, I used to hate that part when I was a teenager. Now, I love it!
How to prepare an amazing rainbow trout in less than 30 minutes? I think you already know the answer. Right. Wrap it in bacon! Since the trout is a freshwater fish, bacon is the perfect addition to it.
Bacon and fish
As a result, the trout will stay moist and at the same time will be completed with the lovely, salty bacon flavour. Some time ago, I stuffed a trout with bacon instead of wrapping it in it. It was delicious too. Therefore, I can only recommend combining bacon with fish.
Oh yeah, bacon gives so much flavour to your meals. Either in salads, soups, on a skewer, on a burger, with potatoes, vegetables or even fruits. For instance, check these lovely recipes to get some ideas: Broccoli egg salad, a creamy sweet potato leek salad, colourful zucchini corn skewers and bacon-wrapped prunes.
Furthermore, I wanted the trout to be the star. Therefore, I decided on only one simple side dish. Green beans are simple, yet tasty and with some texture. On the other hand, if you really need something more next to the fish, you can serve it with salad, quinoa, roasted potatoes or pumpkin.
Ingredients for one bacon-wrapped rainbow trout:
- 1 rainbow trout (ca 130 g)
- 100 g bacon slices
- 5-6 garlic cloves (whole, skin on)
- olive oil
- 1 red onion (sliced)
- a handful of green beans (ends cut off)
- ½ lemon (juice)
- salt, pepper
First of all, preheat the oven to 200º C.
Then, wash the trout under cold running water and tap it dry with some paper towels. Season the inside (that would be the belly) with some salt and pepper. At this point, wrap the trout in bacon slices. In order to keep the bacon in place, I wrapped the bacon slices, slightly overlapping around the body, leaving the head and tail out. However, you can use any method you prefer the most.
Furthermore, drizzle a baking dish with some olive oil, place the bacon-wrapped rainbow trout in it and add the garlic cloves around the trout. I always leave the skin of the garlic on. In fact, the skin adds some lovely flavour and basically protects the garlic from getting burnt. And after the garlic is ready, you can simply squeeze it out of the clove.
Before putting it in the oven, quickly drizzle the fish with a bit of olive oil and squeeze some lemon juice on it. Now, put the baking dish in the oven for about 25 minutes. Halfway through, carefully flip the trout. As a result, you’ll get crispy bacon and skin on both sides.
Vibrant green beans as the side dish
When the trout is 10-15 minutes away from being served, prepare the green beans. The ends should be cut off. Wash them and put aside.
Furthermore, in a smaller frying pan, heat some olive oil, add the washed green beans and sliced onion. Probably you’ll need to add a splash of water too and cover with a lid. This will help the beans to steam quicker. Cook for 5 more minutes and then put aside. I like it when the green beans are still vibrant green and slightly „al dente“.
In the end, just before taking the fish out of the oven, turn on the grill function for a couple more minutes. Yes, the skin and bacon will get really crispy! Yummy!
Finally, place the green beans on the plate, sprinkle with some salt and lay the bacon-wrapped rainbow trout on top. Don’t forget the „candy sweet“ garlic. Isn’t this one of the best trouts you ever had, or what? And you know it’s the bacon that makes it especially tasty. Prepare it for dinner or lunch. And keep some napkins on the table too.
