The baked spicy zucchini noodle eggs are made with zucchini cut into strips, salty bacon, crispy sausage, chili flakes and eggs. Start on the stove and finish baking in the oven in less than 30 minutes. Serve this delicious dish for brunch, lunch or dinner.
Zucchini; do you like it? Some people would describe it as a boring vegetable. On the other hand, people like me see it as a beautiful fruit with a soft texture and a mild flavour, which can be used in many different ways.
For instance, you can enjoy it sauteed with some garlic, in a salad, in a soup or minestrone, you can make zucchini pesto or put it in the oven or grill. And let’s not forget that you can put it in your baked goods, too.
I am telling you, zucchini is simply amazing. Give it a try (again) and include this rich in minerals and low in calories fruit into your diet.

How to make zucchini noodles or zoodles
And as impressive as it may look, it is surprisingly easy to make. Even if you don’t own a spiralizer, you can still create zucchini noodles, simply using a potato peeler and a knife. Firstly, make long thin slices using the peeler. Secondly, stack them evenly and then cut them into thin strips. Sure, it will take longer to make them, but the result will be amazing, just like using a spiral cutter. And then, you can arrange them in a spiral way yourself.
Then, add some salty bacon, a lovely sausage and a couple of eggs and there you have a lovely paleo meal. Of course, you can skip adding the meat. Instead, you can play with different spices.
Set egg whites and runny egg yolk
Separate the eggs to keep the egg yolk still a bit runny and the egg whites set. Put the egg whites in the oven first and add the egg yolks only at the end. That way, you’ll have a gorgeous runny egg yolk. Yummy.
Ingredients for two portions of baked spicy zucchini noodle eggs:
- 2 large zucchini
- 1 tsp of coconut oil
- 1 onion
- 2 sausages
- 100 g bacon cubes
- 2 tsp of chili flakes
- sea salt
To begin, wash the zucchini and cut it into noodles. You can use a spiral cutter or simply a potato peeler and a knife (find a longer description above in the text). Then, place them into a bowl and sprinkle with some salt. Set aside. Preheat the oven to 200°C.
Next, cut the sausage into rounds and chop the onion. Melt the coconut oil in a medium nonstick pan and add the chopped onion. Cook until glossy. Then, add the sausage rounds and the bacon cubes. Brown the sausage on all sides. Once the sausage and bacon are almost crispy, sprinkle them with half of the chili flakes. Add all of it to the zucchini noodles, add the remaining chili flakes and gently toss.
Brush a smaller baking dish (15×20 cm) with some melted coconut oil. Transfer the sausage and zucchini noodles to the baking dish, by arranging the zucchini in a spiral or nest form (two).
Separate the eggs. Add only the egg whites to each “nest” sprinkle with some salt and pepper and bake for 12-15 minutes or until the egg whites are almost set. Afterwards, carefully add one egg yolk to each “nest” and place them back in the oven for 3 more minutes.
Finally, serve the baked spicy zucchini noodle eggs with a slice of homemade bread to collect the last drop of the creamy egg yolk and sauce.
