Bunless Surfer burger

Time for burgers! And this summer burger variation will just knock you down of your chair. This burger has everything. It has the sweetness, the crunchiness, the creaminess and the juiciness. There is only one thing missing; the bun. But this won’t make it less of a burger. In fact, there is an infinity of bunless burger ideas. I called my burger “Bunless Surfer burger” because it’s cool, perfect for summer or for grilling on the beach. 

This recipe serves 4 portions:

  • 400 g minced meat
  • 1 red onion
  • 2 garlic cloves
  • 1 egg yolk
  • mint leaves
  • 2 beetroots
  • 4 pineapple slices
  • 4 lettuce leaves
  • olive oil
  • salt and pepper

How to make it:

Start with preparing the burgers. In a bowl mix the meat, chopped onion and garlic, one egg yolk, mint leaves and salt and pepper. Mix it with your hand till well combined. Form four burger patties and place them on a baking paper.

Prepare two pans. One for the patties and one for the pineapple. You can use the fresh pineapple or the one from a can. I used the fresh one. In order to get 4 slices, you cut the fruit in half crosswise and out of that you cut 4 slices ca 1,5 cm thick.

Turn on the heat. Drizzle some olive oil in the pan for the meat and when it gets warm put in the burger patties. After four minutes turn them around. It might take a little longer, depending on how thick the meat is.

I used a grilling pan for the pineapple slices. Like that you will get nice brown stripes on the pineapple. Place the slices in the pan only when it gets really hot. Grill the slices for 5 minutes on each side and wrap them in a aluminium foil (just for the time until the burgers are done). Like that the slices will still be cooking in the steam and will become sweeter.

Wash the lettuce leaves and cut the beetroot into slices (1 cm thick). Start building your summer burger. You can add all the toppings that you like.

My structure was: lettuce as the base, then a grilled slice of pineapple, followed by a juicy meat patty and a slice of sweet beetroot. As the topping, I added a tea spoon of horseradish dip. You can build it in any order you prefer the most.
