Here I will show you how to make a great snack with an amazing look and taste. This chia yoghurt with frozen berries is all but boring. Berries have amazing flavours, colours and textures. And frozen berries can be enjoyed all year long. I love mixed berries like blueberries, blackberries, raspberries, strawberries and currant.
This recipe requires at least 2 hours of refrigeration. If you want it for breakfast, prepare it the night before.
Ingredients for 2 portions of chia yoghurt with frozen berries:
- 6 Tbsp of chia seeds
- 5 Tbsp of frozen berries
- 400 g plain yoghurt
- 3 Tbsp of coconut milk (creamy)
- 1 banana
- coconut flakes (shredded)
Prepare two medium bowls and a blender. Divide the yoghurt and the coconut milk between one bowl and the blender. Then add two spoons of frozen berries to the blender and mix until you get an almost smooth-dark-pink mixture.
Pour the mixture into the other bowl. Add three spoons of chia seeds to each bowl and mix well by using a fork. Place the two bowls in the fridge for at least two hours.
Once the chia yoghurt is ready, peel and cut the banana into rounds. Prepare two glasses and start to fill them up by alternating the two colours. For example, start with white (in between place the banana rounds with the cut part flat on the glass), then pink, white, pink and so on. You can add the bananas whenever you like.
Finish by placing the remaining frozen berries on top of the chia yoghurt and sprinkle with some coconut flakes. I also added some strawberry mint leaves.
Serve the chia yoghurt as a cool dessert or snack, in winter or summer.
