Homemade pancetta onion dip

This classic homemade pancetta onion dip will be the star of your table. Creamy Greek yogurt, sour cream, caramelized onions, crispy pancetta and fresh coriander; a perfect combo to pair with crunchy vegetables or crispy crackers. It is so delicious, you’ll get addicted to it.

I love simple things, such as this dip. So easy to make but so very tasty and rich. Most probably, you have all of the ingredients in your fridge right now. Wink. Oh my, just think of it; creamy yogurt with an intense onion and pancetta flavoured base.

This pancetta onion dip makes a delicious party snack or midweek dinner. It is perfect as lunch to go as well. Also, it can be made and stored in the fridge a day early before serving it. And you know what, it tastes even better then. The creamy yogurt is infused with sweet onion and salty pancetta flavours. Yummy. To die for.

It pairs wonderfully with crunchy raw vegetables, such as carrots, radishes, cauliflower florets or cucumber. Also, you can enjoy it with toasted bread, breadsticks or on a movie night with some salty crackers. Simply serve it on a tapas evening. Wink. Believe it or not, it tastes lovely with meatballs or in a sandwich, too.

A really quick, easy and economical recipe on how to make a delicious dip, perfect to satisfy your savoury cravings. Your friends will love it, too. Serve it with some pretzels and beer and the fun is guaranteed. Wink. Try to make your own onion dip. It is a lot simpler than you think.

In fact, you’ll need only a couple of things. Firstly, you’ll need a creamy yogurt or sour cream. I picked natural, unsweetened Greek yogurt and I mixed it with some sour cream. Oh, I love the combination.

Secondly, to make this dip, you can choose between pancetta or bacon. They are both made out of the same part of the pork. The only contrast is that they’ve been cured using a different process. In fact, pancetta tastes a lot like bacon but without the smokiness.

And thirdly, sweet caramelized onions. When making the bacon or pancetta crispy, save the fat in the pan and cook the onions right in it. So yummy. That’s just one secret how to make delicious onions.

The other secret to delicious caramelized onions is patience. A lot of patience. Cook them slow to soften them, then brown and caramelize them. Slice them not too thin but also not too thick. Just around 3 mm will do fine. Also, you can keep the half-moon slices or cut them into smaller pieces.

Ingredients for around 400g homemade pancetta onion dip:

  • 300 g Greek yogurt
  • 2-3 Tbsp of sour cream
  • 5 pancetta or bacon thin slices
  • 2 medium red onions
  • 5-10 g butter
  • fresh coriander

To begin, place the pancetta slices into a cold skillet or frying pan and cook them until curled up. Transfer them onto some paper towels in order to absorb the fat and to get them extra crisp.

Next, peel and slice the onions into 3 mm slices and put them in the pan you’ve just used. Slowly cook them in the pancetta fat stirring often until soft and slightly browned. At this point, stir in the butter and cook until caramelized. Flip them onto paper towels, too and allow them to chill off.

In the meantime, combine Greek yogurt and sour cream in a medium bowl. Roughly chop the crispy pancetta and add it to the yogurt. Add the onions as well and stir to combine.

Finally, for an extra contrast to the sweetness of the onion, garnish this homemade pancetta onion dip with some freshly chopped coriander, parsley or chives, just before serving.
