For my last recipe this year, I am happy to share this delicious, fun and gorgeous Jack Frost cocktail recipe with you. Nothing says “Happy New Year” more than a festive cocktail. Therefore, switch the classic champagne with this tropical cocktail, packed with vodka and welcome 2020 in a great way.

Making this lovely blue cocktail couldn’t be easier. All you need is a blender and the ingredients. Also remember, the more ice you’ll use, the more thick and icy the drink will be. Like a granita or a slush, for example. You should be the judge of the amount of ice you want to use to match the winter season. Wink.

On the other hand, if you like more of the drink and less ice in your glass, you can still make the “shaken not stirred” variation, by using a shaker. However, I think the small ice pieces give that special look and feel to the Jack Frost cocktail.

Oh, by the way, do you know who Jack Frost is? He is the personification of the winter season and all that comes with it; for instance, ice, wind, cold and snow. Therefore, the name is just perfect for this cocktail’s look. You have the whole winter in a glass. Wink.

How to make a blue cocktail

Don’t you just love this blue colour? It’s so fun! And it resembles winter. But where does the blue colour come from? Well, probably, it includes a smurf. Ha ha ha. Just kidding. The colour comes from blue curacao syrup, which has a light orange flavour and gives your cocktails a wonderful eye-catching look.

Moreover, along with blue curacao, comes also pineapple juice, coconut cream and vodka. To tell you the truth, I am not a big fan of vodka. However, I think it’s a great ingredient for this festive cocktail. Vodka has a neutral flavour and leaves the tropical flavours of pineapple and coconut in front. It reminds me a little of Piña Colada. Yummy. Also, I can imagine using Malibu rum instead of vodka. Well, maybe next time. Wink.

Pineapple and coconut are a perfect combination

Talking of pineapple and coconut, I love the combo of the two. They go together like bread and butter or peanut butter and jelly. Wink. And, I love them in food recipes as well, either together or separately. Yummy. For example, check out these: a refreshing pineapple mango coconut sorbet, this wonderful pineapple express, a delicate cauliflower-leek coconut soup, a moist carrot pineapple cake, creative crunchy coconut pickles, a delicious spinach pineapple braid or a giggly coffee-coconut panna cotta.

Furthermore, as you’ve already noticed, I pimped my glass. Wink. Making a coconut rim takes just a couple of seconds and makes it look special and fancy. Give this cocktail a go. It’s soooo darn good.

This cocktail recipe serves two portions, but you can multiply it (the numbers are really easy and round) to get more portions. Having that said, probably, your blender probably can’t blend 10 kilos of ice at once, therefore, I would suggest making a couple (from 2-4) portions at a time. And of course, you don’t need to serve it in a martini glass. It works with any glass.

In addition, when you want an alcohol-free cocktail, skip the vodka or make a completely different cocktail: a lovely pear cocktail or a fruity cranberry punch (yeah, this is my Halloween recipe, therefore, just skip the add-ons).

Ingredients for two glasses of Jack Frost cocktail:

  • about 600 g ice cubes
  • 80 ml of pineapple juice
  • 50 ml of vodka
  • 40 ml of blue curacao syrup
  • 40 ml of coconut cream (canned coconut milk)
  • coconut flakes and honey (for the rim)

In a blender add the ice cubes, vodka, pineapple juice, blue curacao syrup and coconut cream. All of the ingredients should be in there. Now, puls two times and then blend for 30 seconds or until you reach the desired consistency.

Then, spoon some liquid honey on a smaller flat plate and some coconut flakes on the second plate (both in a circle shape, like your glass). This is what you need to make a coconut rim. Simply dip the glass rim (of course upside down) in the honey and afterwards in the coconut flakes. As a result, you should have a lovely icy-looking rim.

Finally, pour the cool drink into the glasses and serve immediately. Three, two, one, party! The pastel-blue Jack Frost cocktail will certainly be the highlight of your NYE’s party.
