Here is a recipe, where looking at the photo it does not say much. But when it is physically in front of you, you might change your opinion. The ingredients are not many, but there is ginger in it to give it a nice kick. This “Lemon-honey chicken” dish is perfect for a summer lunch or dinner. It is also great if you’re counting the calories of each meal that you eat. It is a light and healthy dish.
The ingredients are:
- 2 chicken breasts
- ½ of broccoli tree
- 2 carrots
- a couple of spoons of peas
- 3 garlic cloves
- bean sprouts
- a piece of ginger
- 2 Tsp honey
- 2 lemons
- 1 tsp of Ghee or some olive oil
- salt and pepper
Start by chopping the garlic and the carrots. Cut the ginger into small pieces or slices. Furthermore, melt some Ghee in a pan and add the garlic and ginger. Ginger will release a great aroma straight away. After a couple of minutes add the chicken breasts, season them and cover the pan. Turn the chicken after a couple of minutes and squeeze half of the lemon in the pan next to the chicken. Cover and let it cook. Give it an occasional stir and turn the chicken on all sides.
When the chicken is almost done add the carrots. In a bowl mix the lemon juice squeezed out of fresh lemons, the honey and 50 ml of warm water. Add half of this mixture in the pan with the chicken and stir occasionally. Cook for 10 minutes or till the chicken is done and not pink anymore.
Take the half of the broccoli tree, clean it, cut into florets, wash and steam in a pot for 5 minutes. You need to cover the florets only with 1 cm of water and let it simmer for 5 minutes. When done, discard the water and keep warm.
In conclusion add the rest of the honey-lemon mixture, the peas and the bean sprouts to the pan with the chicken and cook for 10 minutes.
Serve the “Lemon-honey chicken” with some white wine, beer or cucumber lemonade.
