Spooky, marbled deviled eggs filled with toxic green filling are a wonderful snack for the night of Halloween. They look gorgeous and they taste delicious. Your guests will love the tangy-creamy combination. Horseradish is a great surprise to the egg filling.

Deviled eggs, also called stuffed eggs or dressed eggs are a great and fun snack. The term “marbled” comes from the great marble pattern. And the process how to make them is really easy. In fact, the eggs are hard-boiled and the outer shell of the egg is cracked but not removed. Then, it has to be soaked in a coloured liquid. For instance tea, vegetable juices or food colours.

In this specific recipe, I mixed water and edible colour. Since I decided on a green filling, I thought purple would be a lovely contrast. Therefore, I mixed purple colour to create those spooky but beautiful “veins” all over the egg.

Afterwards, you halve them and make your egg yolk stuffing. By making the deviled eggs stuffing, you can really give your imagination a go. Combine herbs, spices, seeds and, since it’s Halloween season, don’t forget the colour. Wink. My filling looks toxic but gorgeous neon green. I love it.

It tastes just like it looks. Wink. In fact, it is a bit tangy. And, with each bite, the horseradish punches right up your nose. Woohoo. A lovely surprise. This stuffing is creamy, eggy, colourful and tangy. A perfect combination.

These marbled deviled eggs are a delicious treat when you get a bit tired of all the sweets and candies. For more savoury Halloween spooky treats, check these cute mummies and gross zombie guts. However, sweets are almost a must on Halloween. And there is no party without a cake: for instance these monster strawberry cupcakes, a marshmallow spider web cake, a colourful spider web roll cake or some cute monster jelly doughnuts.

Tips for fail-proof marbled deviled eggs

Firstly, maybe you’ve noticed, by peeling fresh eggs, they tend to break and they don’t peel so easily. The reason why this happens is that the membrane clings tenaciously to the shell and makes it hard for you to remove the shell without damaging the egg. In order to prevent the egg from breaking, I suggest using eggs a couple of days older.

Secondly, try to create small cracks, without damaging the membrane. Also, make sure you give the hard-boiled eggs enough time to cool off before going to the next step.

Thirdly, the longer you let them “soak” the more intense the colours will be. As a result, by removing the shell, you’ll reveal a lovely marble pattern.

Ingredients for 8 Halloween marbled deviled eggs:

  • 4 eggs (hard-boiled)
  • purple gel food colour
  • 3-4 tsp of horseradish
  • 1-2 tsp of olive oil
  • salt
  • green gel food colour

Things you’ll need: piping bag and any star piping nozzle (4B, 6B, 8B or any other)

To begin, cook the eggs. Place the eggs in a pot, cover with water and put to cook. Once the water starts to boil, cover the pot, turn the heat off and let the eggs sit for 15-20 minutes. Then, remove the eggs from the pot and let them cool off.

Furthermore, by applying slight pressure, roll each egg on your cutting board, to create small cracks in the shell.

Marbled purple eggs

In order to create the marble pattern, take a plastic freezing bag, add 100 ml water and some purple gel food colour. Stir or shake until combined. Then, add the cracked eggs in it and gently roll them (without applying any pressure) into the coloured liquid. Make sure the liquid has reached and covered the whole surface of the eggs. Before the next step, let them sit in the colour for two hours.

At this point, remove the eggs from the bag and carefully peel them. Afterwards, halve each egg lengthwise and, using a teaspoon, scoop out the egg yolk (without damaging the egg).

Put the egg yolks in a small bowl and mash them with a fork. Then, stir in some olive oil, horseradish, a pinch of salt and some green food colour until well combined.

Now, fill it into a piping bag with a star piping nozzle and pipe the green filling into each egg half. Store them in the fridge until serving them.

Finally, serve the chilled marbled deviled eggs on a Halloween night, as a party snack or just like that. As the final touch, sprinkle them with black sesame seeds.
