This nutritious mango-avocado salad is way more than just a pretty salad. Bursting with fresh ingredients, such as lettuce, bright yellow mango, creamy avocado and mozzarella and a touch of cayenne pepper it makes a healthy and satisfying meal.
Salads are one of the most versatile dishes. And, they are budget-friendly, healthy and incredibly quick to prepare, too. In fact, this mango-avocado salad is ready in less than 20 minutes and it makes a delicious side dish or a great lunch on its own.
Moreover, this summer salad is a light meal, packed with simple, fresh ingredients, which everyone can find in a local supermarket. For instance, lettuce and avocados are available all year round. Mangos, on the other hand, can be found in larger well-stored supermarkets. Of course, you can easily swap mango with any other fruit of your choice.
Sweet mangos are a wonderful addition to any dish. These tropical fruits are sweet, refreshing and colourful. They bring summer to your table. And, like most fruits, they come with nutritious benefits, such as vitamins A and C, minerals and a lot of fibre. Paired with mozzarella and avocado, it creates a delicious combo.
Also avocado is a great source of vitamins, but they are most known as omega-3 fatty acids provider. As a result, avocado brings that incredible creaminess to this dish. In order to keep the fruit flesh from browning, make sure to coat the sliced avocado with lemon or lime juice.

In addition, I added also onions to this salad. Since a raw onion has a strong flavour, I marinated the onion rings in some vinegar. The longer you let them soak in the marinate the softer and milder they taste.

Ingredients for two portions of nutritious mango-avocado salad:
- 1 red onion (thinly sliced in rings)
- 2 Tbsp of vinegar
- 3-4 handfuls of young lettuce (around 150-200g)
- 1 mango (ripe)
- 1 mozzarella
- half a lemon (juice)
- 1 avocado
- olive oil
- 1-2 tsp of cayenne pepper
- fresh basil (garnish)
To begin, wash the lettuce and let it drain in a sieve. Then, peel and slice the onion in thin rings. Put the onion rings in a small bowl, add the vinegar, a pinch of salt and toss. Marinate until you are ready to serve or you can prepare them a couple of hours ahead, too.
Furthermore, peel and slice the mango and slice the mozzarella. Cut the avocado in half, remove the pit and the peel. Then, slice it into 1 cm thin slices. You can dice it, as well. At this point, squeeze the lemon over the avocado, to prevent oxidation.
Finally, combine everything in a salad bowl, drizzle with some olive oil, sprinkle with some salt and cayenne pepper, add the basil leaves and gently toss. Serve this delicious and nutritious mango-avocado salad as a light dinner or with a slice of bread or chicken for a whole meal.
