Happy Halloween! Finally this night has arrived! And like every year, the shops and media are “motivating” us with millions of different items. Apart from all the pumpkins, bats, witches, costumes and bloody knives, there are of course also different snacks. Today I will show you how to make Oreo spider cupcakes. They are perfect for Halloween and a great treat for a party. So follow this recipe to make some delicious spooky cupcakes.
Ingredients for ca 10 -12 Oreo spider cupcakes:
- 140 g of chocolate (dark, bitter)
- 40 g of unsalted butter
- 40 ml of cream
- 60 g granulated sugar
- 2 eggs
- 40 g flour
- 100 g of berries (blueberries or raspberries)
Ingredients for the icing and decoration of the Oreo spider cupcakes:
- 1 egg white
- 20 ml mineral water
- 70 g sugar
- a pinch of salt
- 10-12 Oreo cookies
- 20-24 candy eyeballs
- 1 black colour edible food colouring pen
- cupcake moulds
First, combine sugar and butter in a bowl and mix them until fluffy. Next, heat the cream, but just to the point when it is about to bubble. Chop the chocolate, put it in a small bowl and cover it with the hot cream. Give it a little stir and let the chocolate melt. Once the chocolate is melted, pour it into the butter bowl and stir to amalgamate well.
Furthermore, take another, a little bigger bowl, crack the two eggs and mix them until pale and fluffy. It should take 6-8 minutes. After that start stirring in the flour. Once all the flour is well blended in, pour the chocolate butter mixture into it. Using a spoon stir a couple of times, in order not to overmix it and lose all of the fluffiness.
Now preheat the oven to 150º C and prepare your cupcake moulds. Paper liners are good. If you want you can also place them into the silicon cupcake mould. Put one spoon of the chocolate mixture in each paper liner to cover the bottom. Then add the berries (3 raspberries or 4 blueberries) and again add the chocolate mixture to cover ¾ of the mould.
Next put the mould in the oven on the middle rack and bake for 20-25 minutes. Once the cupcakes are baked, take them out of the oven to cool down. If you used the silicon mould, take the cupcakes out of it and let them cool down for at least 1 hour. They might be cold outside but still warm on the inside.
When the cupcakes are not warm anymore, prepare the icing. In a bowl beat the egg white with a pinch of salt until you get to a stiff consistency. The “snow” should form peaks stiff enough to keep their shape even when turned upside down. In addition, melt the sugar with water in a small pot. No need to stir it, just give it a little shake. When the melted sugar starts boiling and the liquid gets transparent, pour it slowly into the stiff snow with continuous mixing on medium speed. Then continue mixing on higher speed until you get a glossy, silky icing.
Now it’s time to decorate the cupcakes. I used a piping bag to apply the icing on the cupcakes. But you can also try with a spoon or simply use a plastic freezing food bag making a small hole at the end. Start applying in a spiral from the middle towards the outside. Then, with the black food colouring pen make eight spider legs. That means, four stripes going from the middle till the edge on each side. At the end simply place a nice Oreo cookie on top with two candy eyeballs glued to it. By glued I mean using the black food colouring pen.
To summarize, you baked the cupcakes, made the glossy icing and created a sweet spider with legs and eyes. As a result, you have some amazing Oreo spider cupcakes and you are ready for the party.
