Oven-baked chicken, cabbage and hummus

This easy oven-baked chicken, cabbage and hummus recipe is a balanced hearty meal. It combines crispy chicken drumsticks, tender sautéed cabbage, toasted pecans and velvety homemade hummus. Whether a quick dinner or a crowd-pleaser, this dish delivers satisfying flavours in every bite!

Who loves chicken? I do because I can eat it with my hands. I know, a bit messy, but fun at the same time. And chicken drumsticks, prepared with a bone-in, skin-on method, are perfect for that. Why you should try chicken wings? Besides being convenient, they are healthy and they require minimal prep work. Homemade hummus

Hummus is the perfect way to add creaminess to your dish, without using cream. In fact, this is a healthy way to do it and enjoy it. The combination of chickpeas, garlic and tahini paste is already amazing. If you can, don’t skip the tahini paste and iced water. Moreover, Tahini gives a nutty and rich flavour to your homemade hummus. Water helps you to achieve that perfect smooth texture.

Also, I added smoked paprika as well, which adds a lovely smoky depth and slightly spicy flavour to the hummus. Adjust the amount of smoked paprika to your desired level of preference. Furthermore, hummus goes well with cabbage. But, try not to overpower it. Instead, keep it simple. A quickly sauteed cabbage with some butter and salt is just perfect.

Ingredients for crispy oven-baked chicken, cabbage and hummus:

  • 4 chicken drumsticks
  • 3 tsp of olive oil
  • 1/4 of Savoy cabbage head
  • 20 g butter
  • 400 g chickpeas (canned)
  • 1 garlic clove
  • 4 tsp of tahini paste
  • 3 tsp smoked paprika
  • 20-40 ml iced water
  • 10-15 pecans
  • sea salt
Homemade hummus is incredibly velvety and it comes with a note of smoked paprika. For a perfect dish, serve it with oven-baked chicken drumsticks and sauteed Savoy cabbage.

Start with preheating the oven to 200°C. Place the chicken drumsticks on a baking sheet lined with baking paper and brush them with olive oil. Put them in the oven and roast them for 50 minutes, flipping them halfway through.

In the meantime prepare the hummus. Put the chickpeas, garlic, tahini paste, smoked paprika and a pinch of salt in a food processor. Blend for a couple of minutes, then gradually add iced water, just until smooth and velvety. Set aside.

Next, cut the cabbage into strips and saute them in a pan with a splash of water. After it gets soft, turn off the heat, and stir in a bit of butter and sea salt. Cover it and keep warm.

Once the chicken drumsticks are close to perfect, scatter the pecans next to the drumstick in the oven for a couple of minutes. Then, turn off the oven, remove the pecans, and leave the chicken in until ready to serve.

Finally, scoop a couple of spoons of hummus onto a plate, followed by buttery cabbage and chicken drumstick. Finish with toasted pecans and some additional smoked paprika. Oven-baked chicken, cabbage and humus make a lovely lunch or dinner.
