This pea and radish chicken salad is as pretty as it is delicious, with golden-brown chicken, bright green peas and crispy red and white radishes. Yes, these three ingredients make a wonderful summer meal, a quick midweek dinner or a lovely Sunday lunch.
Summer is the time when I don’t like to prepare dishes which require long cooking time. Especially during really hot days I, and probably you as well, just want something quick that tastes amazing and looks stunning.
This recipe is super quick. Make sure you have everything prepared because, by the time the chicken is done, you are ready to serve. Wink. Don’t you just love quick and easy recipes? Vibrant and healthy dishes as this one bring joy to the table.
I love chicken
I like chicken. In fact, you can see quite some chicken recipes here on my blog, such as chili lime chicken, a delicious peanut butter crust chicken, a classic Caprese chicken, a fruity chicken mango walnut salad, lovely spinach and artichokes chicken thighs, another creamy almond butter chicken, a must for Christmas stuffed chicken and saucy chicken over creamy polenta. But why not? It’s delicious, healthy, versatile and quick to prepare.
And for those of you who like to use spices, I suggest this flavourful green chicken curry, the amazing seven-spice chicken, a creamy banana turmeric chicken and this great variation of Cape chicken curry.
Having said that, everytime, when you are dealing with chicken, you have to be aware of germs. Therefore, make sure to clean the knives and cutting board that you use. In this case, I cut the chicken breasts on my cutting board. After the use, I washed the knife and the cutting board with really hot soapy water and then I dried them. Yeah, after washing, remember to dry the surface, too. Germs love the wet areas.
Furthermore, chicken, any part of chicken, pairs great with almost anything. A classic dish would be chicken and roasted potatoes. Oh yummy! I love to put chicken in soups and salads, too. And this time, I combined it with two completely different yet beautiful vegetables; green peas and radishes.
Fresh or frozen peas
Look at these colours! How wonderful is this? I am always fascinated by the vivid green colour of the peas. And, you can get that colour only with the frozen peas or really fresh peas still in the pods.
However, unless you are growing green peas yourself, finding fresh pea pods is quite rare (at least in my city). Most of the time, if you find them, they are sitting for days in the shop or at the market. From the time the pea pod is picked, it starts losing its freshness and gets stale and starchy.
Consequently, frozen peas are actually fresher than the fresh ones. In fact, these peas are frozen straight after being picked. Wink. How bizzare, isn’t it? Also, they have as many nutrients as the fresh ones, too.
And now, a word about these crunchy vegetables with bite, radishes. In this recipe I used the lovely small red radishes with a white inside. But you can use any radish you like most. Since radishes taste best raw, they are amazing for salads.
Not only they look cute, but they are also healthy and delicious. I love the mild pungent note you can taste after some bites. Radishes make a great movie snack, too.
Ingredients for 2 portions of pea and radish chicken salad:
- olive oil
- 400 g chicken breast
- 2 Tbsp of soy sauce
- salt
- 300 g frozen green peas
- 6-8 radishes (sliced with greens)
To begin, wash the chicken breast under cold water, tap them try and then slice them into 2 cm thick medallions (you should get 5-6 pieces from each). Then, in a non-sticking frying pan, heat some olive oil. Once it’s hot, add the chicken and brown it on all sides.
In the meantime, boil some water and thoroughly wash the radishes, especially between the green stems. Then, you can either slice them or just halve them, leaving the greens on them.
After the chicken is white on the inside and golden-brown on the outside, add a couple of spoons of soy sauce, cook for about one minute, then, cover and remove from the heat.
Furthermore, when the water starts boiling, throw in the frozen peas and cook for 2-3 minutes. Drain the green peas and toss them with some salt and olive oil in a small bowl.
In conclusion, arrange the green peas and radishes on a bigger serving plate or two single plates, top them with chicken and sprinkle with some fresh black pepper. This pea and radish chicken salad makes a perfect summer dish. It’s a light, fast and easy to prepare, colourful, healthy and delicious lunch or dinner.
