Purple soup

When I think about soup, I think of a soul-warming bowl of liquid greatness. The soup itself is not only a starter but can also be a main dish. It has to taste amazing, look fantastic and it has to make your tummy happy. Soup recipes shouldn’t be put in a dark corner. There are endless varieties of soups that you can make. Try out this recipe and you will become a soup-lover for sure.

Ingredients for ca 4 portions:

  • 400-500 g purple potatoes (Peruvian potato)
  • 1 white onion
  • 3 cloves of garlic
  • a piece of ginger (2 cm)
  • 1 tsp of Ghee or coconut oil
  • salt and pepper
  • cilantro (for decoration)

Take a deep pot and add the Ghee or oil. Chop the onion, garlic and the piece of ginger. Peel the potatoes and cut them in halves. The potatoes are small and with a weird shape. It will take some time to peel them and be aware that your fingers will get coloured to purple.

Turn on the heat on the stove. When the Ghee is melted add the onion, garlic and ginger. Keep stirring for a minute. Add the potatoes and stir for 30 seconds. Season with salt and pepper. As next pour ca 1,2 l of hot water in the pot, bring it to boil and cook for 15 minutes or till the potatoes are soft.

When the potatoes are cooked, remove the pot from the stove and blend everything together using an immersion hand mixer till you get a smooth and creamy texture. Put back on the stove for a couple of minutes and adjust the seasoning.

In conclusion, garnish this nutritious and colourful soup with some fresh cilantro and a spoon of yoghurt or sour cream.
