Today I would like to show you a recipe with one of my favourite ingredients. The chorizo sausage. Every time I see chorizo in a recipe I think “this must be yummy!” With chorizo everything tastes better. The Spanish variation is made with smoked pork and with dried smoked red peppers. This is what gives an extra flavour to the dish.
In this recipe I put the chorizo in a salad, with some nice pan roasted potatoes. Give it a try and I am pretty sure you are going to love it. Maybe you can also try something with other variations of this amazing sausage. You can find it in many different cuisines, such as Spanish, Mexican, Portuguese, South American, Goan, Puerto Rican and Philippine.
Ingredients:
- 4 small fresh chorizo sausages
- 4 potatoes (medium size)
- 3-4 handfuls of rocket
- 3 garlic cloves
- 2 spring onions
- olive oil
- lime
- passion fruit vinegar (or any other fruity vinegar)
- salt and pepper
Start with washing the potatoes and cutting them into quarters. Clean and chop the garlic. Drizzle some olive oil in a pan and when it gets warm put in the potatoes. Sprinkle them with salt and pepper and roast them for 10 minutes. Stir occasionally. Then add the garlic and roast for another 10 minutes.
In the second pan go the chorizos. Only when the pan is hot put the sausages in. There is no need to add oil or any other grease. Brown them on all sides. It will take only 5 minutes or so. I advise you to open a window, because it will get really smoky.
Wash the rocket and drain off all the water. In a small bowl make the dressing by combining lime juice, olive oil and fruity vinegar. Stir it and add it to the rocket salad. Mix it well.
Serve the roasted potatoes on a rocket bed topped with chorizo. At the end add some chopped spring onions on top. Maybe with this recipe you will also find your favourite sausage.
