Rosemary bacon shaved Brussels sprouts

Check out this great way how to enjoy Brussels sprouts. Rosemary bacon shaved Brussels sprouts is a delicious dish, ready in only 10 minutes. Shaved Brussels sprouts, salty smoky bacon and aromatic rosemary are beautifully linked together with a knob of butter and soy sauce. Yummy.

I’ve made Brussels sprouts before. I simply love them. These small green balls are not only full of flavour but also full of vitamins. If my old recipes of sweet potato crust Brussels sprout tart and roasted Brussels sprouts with cranberries didn’t convince you to try this lovely veggie, then you have to try this recipe.

Rosemary bacon shaved Brussels sprouts makes a great meal or a perfect side dish. In fact, it goes great along with roasted potatoes, a stunning and crisp roasted chicken or with a classic meatloaf. And, as I mentioned, it’s ready in only 10 minutes.

Whole or shaved Brussels sprouts

I have always either cooked or roasted whole Brussels sprouts. And of course, I made a small cross at the bottom of each one of them. Those times are gone. Since I’ve seen how Jamie Oliver does it, I am not going back to the old way. Shaved or shredded Brussels sprouts are way better. A revolution. Wink.

Shaved Brussels sprouts are the right method.

What makes this dish so special are the shaved Brussels sprouts. Yeah, shaved. In other words, they are sliced into thin slices. Using a food processor is a time saver. However, you can still use a knife. As I did. On one hand, using a knife will take a couple of minutes longer, on the other hand, it works like a meditation or stress reliever. Wink.

Moreover, thin-sliced Brussels sprouts will cook quicker, reheat quicker and you’ll be able to take that slightly bitter note out of them. Also, by slicing them, you already tenderise them. This all makes it such a quick recipe.

Along with bacon, you’ll find rosemary in this recipe as well. This Mediterranean herb is amazing. I love it, either fresh or when crisp. There is almost a harmony between the three of them.

If you make this dish a day ahead, it will take you only 3 minutes to reheat it. Amazing!

Ingredients for 4-6 portions of rosemary bacon shaved Brussels sprouts:

  • olive oil
  • 3 bacon slices
  • 700-800 g Brussels sprouts
  • 2-3 rosemary sprigs
  • 100-150 ml of white wine (or water)
  • salt and pepper
  • 30-50 g butter
  • 3-5 Tbsp soy sauce

Start with washing the lovely Brussels sprouts. Then, either put them in a food processor or slice them into 2 mm thick slices with a knife.

After you sliced them, set them aside and finely slice the lovely bacon into strips. Furthermore, in a larger frying pan heat some olive oil. Once it gets hot, add the bacon strips and cook until crisp. To add even more flavour to this simple dish, use a couple of rosemary sprigs.

Then, add the sliced Brussels sprouts and give it a stir. In order to soften them, pour in a splash of white wine or water and stir again. After a couple of minutes, season with salt and pepper and at the very end add a piece of butter, which will link altogether. Yummy.

Last but not least, add around three spoons of soy sauce, give it a quick stir and remove from the heat.

Finally, serve the rosemary bacon shaved Brussels sprouts when still steamy. They taste amazing just like that or served with potatoes, meat or fish. Lovely! They are a great delish to enjoy all year long but especially in winter.
