Salad with pork tongue head cheese

You have to try this amazing salad recipe. It includes an ingredient that you probably hadn’t considered eating before. Have you ever heard of the head cheese? It is neither a cheese nor a head as you might think. It is a cold cut meat jelly that comes originally from Europe. When I was a teenager my mother used to cook veal tongue. I didn’t like it cold, but warm, it was super delicious. It was melting in the mouth. This time I tried the head cheese with pork tongue, that my parents sent from Slovenia. And I must say I loved it. I know it might sound strange and funny that someone likes to eat a pig’s tongue. Well, you just need to not think about it and simply try it. It is a great addition to a salad dish. So show some guts and try this “salad with pork tongue head cheese.”

The ingredients for 2 portions:

  • 2 handfuls of rocket
  • 15-20 mini silver onions (in a jar)
  • 2 nectarines (juicy but not too ripe)
  • 2 eggs
  • 8-10 slices of pork tongue head cheese
  • sweet-chili sauce
  • lime
  • olive oil

First, boil the eggs. In the meantime wash the rocket and the nectarines. Prepare the salad dressing, using only three ingredients; sweet-chili sauce, juice of one lime and some olive oil. Mix well to combine all the ingredients. Season if needed.

Put the rocket on two plates and add the salad dressing on it. With a small knife cut the nectarines. Cut all the way around the pit, twist the two halves, open them and remove the pit. Cut the nectarines into wedges and place them on the rocket salad.

The eggs must be cooked by now. Peel them, cut in half and place them on top of the salad. Do not forget to also add the silver onions and the most important ingredient; that’s the pork tongue head cheese. I ate it cold but if you like it warm, you can simply heat it up in a pan.

Serve the salad with some bread or cheese.
