A flavourful twist with fresh herbs

Last but not least, try using fresh herbs if you can. They make such a big difference in food. Using fresh herbs like coriander, chives, dill and green onion in cooking offers several benefits that enhance the flavour, too. For example, coriander adds a fresh, citrussy and slightly peppery flavour, chives adds a slightly garlicky taste, dill brings a slight anise-like undertone and green onions bring a crisp, fresh and mildly pungent flavour.

Ingredients for savoury sweet potato muffins:

  • 4 eggs
  • 150 g sweet potato (cooked and mashed)
  • 14 ml apple vinegar
  • 55 g coconut oil
  • 5 g maple syrup
  • 2 pinches of salt
  • 2 g of black pepper
  • 30 g fresh coriander (finely chopped)
  • 20 g fresh chives (finely chopped)
  • 30 fresh dill (finely chopped)
  • 1 green onion (chopped)
  • 2-3 garlic cloves (finely chopped or grated)
  • 25 g coconut flour
  • 100 g almond flour
  • 20 g ground hazelnuts
  • 5 g baking soda

Homemade savoury sweet potato muffins

To start, preheat your oven to 180°C. In a larger bowl, combine the wet ingredients. Whisk together eggs, mashed sweet potato, apple vinegar, melted coconut oil, maple syrup, salt and pepper. Once well combined, stir in the finely chopped fresh herbs and garlic.

Then, in a separate bowl, whisk together coconut flour, almond flour, ground hazelnuts and baking soda. At this point, gradually add the dry and wet ingredients, mixing until just combined.

Using a spoon, pour the batter into greased muffin tins (I used different forms) and bake for 20-22 minutes. Then, lower the heat to 170°C and bake for 5 more minutes, or until a toothpick inserted into the center comes out clean.

Afterwards, let the muffins cool in the tin form for a few minutes before transferring to a wire rack to cool completely.

Finally, pair the savoury sweet potato muffins with a green salad, fish or chicken. Maybe serve them with a spoonful of sour cream.
