This delicious Brussels sprouts recipe will win you over. Teriyaki bacon-Brussels sprouts skewers are perfect for throwing on a grill, in the oven or simply in your pan. The salty bacon waved around the sprouts takes these skewers right over the top. They make a great side dish, finger food, lunch or dinner. Best Brussels sprouts ever!

Every time I post a Brussels sprouts recipe, I discover that (still) many people don’t like them. Why?! Give them a try. Wink. I know, cooked Brussels sprouts might be a bit blanc. But, believe it or not, when roasted, they taste wonderful. In fact, they have a sweet, nutty and smoky flavour. Also, they are tender yet still with a bite.

Maybe you’ve experienced bitter Brussels sprouts. I have a solution for you. To avoid them tasting bitter, use fat. For instance, butter, olive oil or bacon fat. And here we come to this recipe. Each Brussels sprout is covered with bacon.

More, you can either use thick or thin slices. With thin bacon slices, you’ll need to be more careful and gentle when folding them on the skewers. However, you can also make two-layer bacon slices. Wink.

Besides bacon fat, I also marinated them in some Teriyaki marinade. This quick to make marinate uses simple ingredients (which you probably have at home) and adds so much flavour to the Brussels sprouts.

While they roast, the bacon fat drips on them and makes them an absolute delight to eat. But let’s be honest. Everything wrapped in or stuffed with bacon tastes amazing. For instance these jalapeño poppers, these sweet bacon-wrapped dates, a whole bacon-wrapped trout, bacon-wrapped zucchini corn skewers or these bacon-wrapped shrimp salad.

Ingredients for 10 Teriyaki bacon-Brussels sprouts skewers:

  • 10 wooden skewers
  • 25-30 fresh raw Brussels sprouts (which equals 50-60 halves)
  • 4 Tbsp of Teriyaki sauce
  • 1-2 Tbsp of olive oil
  • half a lemon (juice)
  • pepper and salt
  • 10 bacon slices

To begin, trim, rinse and halve the Brussels sprouts. Then, place them in a bowl, add the Teriyaki sauce, olive oil, lemon juice, pepper and salt and toss gently. Let them marinate for 20-30 minutes.

In the meantime, soak the wooden skewers in cold water for 5 minutes. Furthermore, thread bacon and Brussels sprouts onto skewers. Start with a Brussels sprout half, then thread the very edge of a bacon slice, add another Brussels sprout, then, fold the bacon slice over the sprout onto the skewer. Repeat these steps until the whole bacon slice is on the skewer. End with a Brussels sprout.

Continue with the remaining skewers. Once all the skewers are ready, preheat the oven to 200º C and arrange the skewers on a baking sheet lined with parchment paper. Brush the Brussels sprouts with the remaining Teriyaki marinade (optional).

Place the sheet in the oven and bake for 15-20 minutes or until the Brussels sprouts get a bit tender but with a bite. At half time, flip them over. More, only at the very end, turn on the grill function for about 4 minutes or until slightly charred.

Finally, serve these delicious Teriyaki bacon-Brussels sprouts skewers with a lovely dip or with some crispy roasted potatoes. They make a wonderful Sunday lunch or a side dish.
