Again, I was trying to make a great recipe with canned tuna. The last one that I’ve made, tuna ceviche, was just amazing. This time I came up with tuna fritters and juicy tomato salsa. A totally different way of eating canned tuna. It is super easy and it only takes 15 minutes to make.
So, let’s start making this yummy meal. The tuna fritters are great also as a snack.
Ingredients for ca 5-6 tuna fritters and juicy tomato salsa:
- 1 canned tuna (150 g drained)
- 2 yellow onions (1 for the salsa)
- 3 Tbsp of chopped cilantro (1 for the salsa)
- 1 garlic clove
- 2 limes (1 for the salsa)
- 2 Tbsp of breadcrumbs
- 1 egg (L)
- 1 Tbsp of mustard
- salt and pepper
- 2 Tbsp of chickpeas
- olive oil
- 3 tomatoes
- 2 green onions
I first prepared the tomato salsa. Like that all the flavours will get well combined. Wash the tomatoes, green onion and cilantro. Dice the tomatoes, chop the green onions, one yellow onion and one stem of cilantro. Sprinkle with some salt and pepper, drizzle some olive oil and squeeze a lime. Toss, cover with transparent food foil and put in the fridge.
Then, prepare a bowl and a frying pan. In the bowl combine the tuna, one chopped yellow onion, the rest of cilantro, chopped garlic, juice of one lime, bread crumbs and mustard. Once everything is well mixed, stir in the egg and season. Only at the end add the chickpeas. Now, it’s time to make tuna patties.
Drizzle some olive oil into the frying pan and turn on the heat. Try to make the patties not too big, I would say about 100 g or 6-7 cm wide and ca 2 cm thick. Once the oil gets hot, place the patties in the pan and fry them for 2 minutes on each side.
Serve the tuna fritters with juicy tomato salsa for lunch, dinner or as a snack.
