Blueberry apple salad with walnuts

Make sure not to skip this delicious and healthy blueberry apple salad with walnuts this summer. This is a perfect dish, which can be ready in less than 5 minutes. Throw together fresh lamb lettuce, crispy apple, blueberries and walnuts and toss all together with some homemade mustard-honey dressing.

Last week we decided to have a green week; which means we would eat only salads. Now, maybe someone thinks that salads are a little boring. Wrong. I can assure you of the opposite.

Not only the salads are made with simple yet delicious ingredients, but they are combined with a homemade dressing as well. You will always find an ingredient that maybe you wouldn’t think of it could “fit” in a salad.

Furthermore, you will see that, besides being beautiful, they are a real flavour explosion, too. After each salad, we like to make some changes and add something new, either fruits, nuts or cheese. You might check out also this spring blueberry arugula salad.

As you can see, there are not many ingredients in this salad. However, these ingredients are enough to make a perfect salad. I always say you should combine fruits and nuts with salads or any other dishes. Salads pair great with fruits and nuts. In fact, In this recipe, I used apple and walnuts. I think they go great together. Don’t you think?

Apples and walnuts

If you are not eating enough apples, because you find them a bit boring, try to introduce them to your salads. They bring that lovely crunch and sweetness to each and every bite you take. Wink.

Moreover, apples are not the only sweet ingredient in this salad. In fact, to make the dressing, I combined mustard, vinegar, salt and honey. Honey and mustard are a great combination. If you have mustard, that is already mixed with honey, use that.

And then, walnuts! That lovely “fruit” that hiding behind a hard shell, is more nutritious than you think. In other words, around 10 walnuts a day, provide to your body all of the necessary things, such as healthy fats, vitamins, minerals and fibre, to stay healthy.

Last but not least, blueberries. I love blueberries! They are so cute, small, round, blue, almost purple. Yet, when you cut them, they are not blue on the inside. How funny is that? Wink. Blueberries are delicious and really healthy, too.

Besides in a salad, I eat them as a snack, with yogurt and ice cream, in muesli or in a cake, such as this stunning blueberry buttermilk cake or this blueberry quark cheesecake. Also, they taste superb in a sauce, paired with meat, like in this recipe; meatballs with blueberry sauce.  

Ingredients for 2 portions of blueberry apple salad with walnuts:

  • 4-5 handfuls of lamb lettuce
  • 1 big apple
  • 20 walnuts
  • 1 handful of fresh blueberries (or dried)

Ingredients for the dressing: 

  • 1 tsp of honey
  • 2 tsp of whole grain mustard (it can be also a normal one or honey mustard)
  • 4 Tsp of apple vinegar (or any vinegar)
  • 3 Tsp of olive oil
  • salt and pepper

To begin, wash the lamb lettuce and drain it. Wash the apple and cut it into thin wedges or cubes. You can use also the apple slicer, which already removes the middle part. Then you just need to slice it.

Blueberries are a great addition to this summer salad. Apples, walnuts and lamb lettuce pair wonderful with these small blue fruits.

Wash the blueberries and leave them to drain, before adding them to the salad bowl. You can leave the walnuts as they are, in halves, or chop them into big chunks.

Next, prepare the dressing. In a small bowl, combine one teaspoon of honey (it doesn’t matter which one), apple vinegar, mustard, olive oil and salt and pepper. Give it a quick stir and you are ready to go.

Finally, combine lamb lettuce, apple slices, walnuts and blueberries in a salad bowl, toss them with the mustard honey dressing and serve. This makes a wonderful summer lunch or dinner or you can bring it to a bbq party, too.
