Time for another great salad recipe. We were really committed to the green week. At day two we were excited how to improve the “salad recipe”. We upgraded the salad recipe big time. This time we didn’t use any green salad. All the ingredients go perfectly together and the dressing makes the flavour pop out even more. Go and check the ingredients and start making the shopping list for the superpower salad. Because of avocados and kidney beans, the salad will get a really creamy consistency. Consequently, you will have a colourful, creamy, crunchy and fruity salad dish.

 

Ingredients for the superpower salad:

  • 3 big tomatoes
  • 1 red onion
  • 2 spring onions
  • 5 Tsp of kidney beans
  • 3 Tsp of corn
  • 2 avocados
  • a handful of basil leaves
  • salt

 

Ingredients for the dressing:

  • juice of 1/2 orange
  • juice of 1/2 grapefruit
  • 2 Tsp of walnut oil
  • 2 Tsp of hummus (we bought it already done)
  • 1 tsp of lime juice
  • 1 Tsp of honey
  • black pepper

Wash the tomatoes and cut them in 2 cm big cubes. You can cut it also in slices. Chop the red onion and the spring onions. Put everything in a salad bowl and sprinkle with salt. As a result, the tomato flavour will be more outstanding. In addition, add the kidney beans (or any other beans that you like), corn and give it a little mix.

How to cut an avocado? With a knife make a cut lengthwise till you reach the pit. Continue slicing all around the pit. Now twist the two halves, take them apart and take out the pit. Usually, I just use a tea spoon to scoop out the flesh. You can also use a knife, slicing gently in the avocado’s flesh without cutting the skin and peel the skin off.

What have I learned about avocados? When you go to the shop you never know what kind of avocado you will get. Therefore, here is a tip for you how to buy a perfect avocado. At the shop don’t start squeezing the fruit. That won’t work; you will only damage it. Try to do this; take an avocado and remove the stem, which is the fruit’s “belly button”. When removing the stem and you see a green colour that means you have found a good avocado. As a result, this avocado will be green and creamy. If you see brown colour under the stem the avocado will have dark or brown spots. Don’t buy that one. And if you can’t remove the stem the avocado is not ready yet.

Now that the avocado is in the salad bowl you can make the dressing. It is super easy and super tasty. In a bowl squeeze half an orange and half a grapefruit. Add the hummus, walnut oil, lime juice, honey and black pepper. Mix it with the spoon until the honey is slightly dissolved. Finally, pour the dressing over the salad and mix it gently.
