This asparagus strawberry salad really impersonates the spring on a plate. Made only with fresh ingredients, such as asparagus, sweet strawberries, lettuce and creamy cheese, it’s a wonderful idea for a healthy and delicious quick meal.
Asparagus season started and it will last till the end of June. That means we have more than two months to enjoy this delicious spring vegetable in abundance. Asparagus is also rich in fibre, vitamins and calcium. Last but not least, it’s very versatile as well. They can be grilled, steamed or roasted, you can blend them in a soup, put in a quiche or salad.
I used green asparagus for this amazing salad. But you can choose between green, white and purple asparagus. A whole rainbow. Wink. I picked green because I like the colour and that a bit grassy flavour, too. Simple as that. Look for firm asparagus at your groceries and they have to make a squeaky sound when rubbing them together.
Besides the bright green asparagus, I also picked sweet strawberries for this salad recipe. I think they pair great with asparagus or with any salad. In fact, your salad will get way more interesting, colourful and delicious if you add fresh fruits to it. Try it out and I can bet you’ll love it. Wink.

Furthermore, along with asparagus and strawberries, I combined the soft lamb lettuce and creamy Feta cheese. You can use any cheese you like, too. For instance, brie, mozzarella, burrata or camembert would be my other choice. I love those. Wink.
Ingredients for 2 portions of asparagus strawberry salad:
- about 20 green asparagus
- 100 g Feta cheese
- 300 g fresh strawberries
- a handful of lamb lettuce
- 2 Tbsp of olive oil
- salt
- 3 Tbsp of strawberry vinegar
Wash the lamb lettuce and let it drain. Then, prepare a larger pan for asparagus. Wash the asparagus and snap the wooden part at the bottom of each asparagus off. There is no need to peel them (most asparagus found at the grocery are quite young and not that tough). Moreover, cut the asparagus in half. Keep the top half aside, while you cut the bottom part into around 4 cm long pieces.
Furthermore, put the smaller, tougher pieces in the pan first, add some hot water and blanch them for about 3-5 minutes. At this point, add the remaining asparagus halves (the top ones) and blanch all together for 3-5 more minutes.
In the meantime, wash and clean the strawberries and cut them into quarters. Also, prepare the salad dressing. It will take you about 30 seconds. Mix strawberry vinegar (or any other fruity vinegar), olive oil and a pinch of salt in a small bowl. Done.
In conclusion, add the lettuce, asparagus and sweet strawberries to the salad bowl. Pour the fruity dressing over them and gently toss. At the end crumble or cut the Feta cheese on top.
Serve this asparagus strawberry salad on a sunny spring day for a light lunch or an early dinner. Maybe take it with you for a lunch in a park or to the nearest lake or river.
