Nectarine bacon salad

There are days when all you want is a salad. Only a great salad can satisfy your hunger. A salad is always a great, quick and healthy either lunch or supper option. Nectarine bacon salad is more than just great, it’s amazing! In fact, it’s a wonderful combination for a summer salad.

Wait a minute. But, where is the salad?! There is some green leafed Romain lettuce and fresh cucumber as well. It’s a salad in the salad. Wink. However, let me get back to the nectarine and bacon for a moment.

Nectarine and bacon? Oh, yeah! I probably mentioned before, bacon goes with everything. I tried many different combinations (one of my favourites are bacon and avocado and fish stuffed with bacon) and you are more than welcome to check out all of my recipes with bacon.

What is so amazing about this salad? On one hand, we have salty and crispy bacon (which you just can’t say no to), on the other hand, there are nectarines. This sweet fruit is simply amazing and perfect for summer; particularly in the peak of summer when they are packed with juices and sweetness.

Beside nectarines, you can also choose between yellow and white peach (this is a classic fuzzy relative of the nectarine) or doughnut aka flat peach. They all taste delicious. By the way, put any of those on the grill and you’ll get a mind-blowing good peach.

I always have the opinion, a salad needs a small crunch, too. Therefore, I added fresh red onion rings and almonds. Any kind of nuts are always a healthy addition or call it an upgrade to any meal. Are you craving for a salad now? Let’s get started.

Ingredients for 2 portions of nectarine bacon salad:

  • one head of Romaine lettuce
  • ½ cucumber (sliced, cubed)
  • 2 red onions (sliced)
  • 2-3 nectarines (cut into wedges)
  • 4-5 bacon slices
  • 10 almonds (roughly chopped)
  • 50-70 ml of olive oil
  • 1 lime (juice)
  • 1 tsp honey
  • a handful of parsley (chopped)
  • salt and pepper

Wash the lettuce and cucumber. Let the lettuce drain while you slice the cucumber or cut it into cubes. Whichever you prefer most. Peel and slice the onions. I would say medium thickness would do ok. I don’t like the onion slices too thick, because they actually taste too strong. And when you cut them too thin, they just lose the crunch.

For the dressing, mix olive oil, lime juice, honey, chopped parsley, salt and pepper. Although this is a simple dressing, it will add so much flavour to your salad.

Furthermore, lay the bacon slices in a non-sticking frying pan. Let them cook until wrinkled and crispy. As I always say, no need to use additional oil or any other fat. This is all between the bacon and the pan. Wink. Once crispy, place them on a paper towel to absorb the grease.

Crispy bacon together with sweet nectarines in a green salad make a great summer salad dish. Add some almonds and cucumber and you are ready to eat.

In the meantime, wash the nectarines and half them. Use the same method as you use for avocados. Make the cut around the pit, twist the halves, remove the pit and then cut into wedges. In case the nectarines or peaches aren’t soft enough, you can put the halves in the pan or on the grill for a couple of minutes. That will do all the magic you need.

It is time to eat. Combine the lettuce (chopped or whole), onion, cucumber, peaches and bacon in a salad bowl. Gently toss, add the chopped almonds (walnuts are great as well) and the tasty dressing. Nectarine bacon salad is a real taste of summer.
