Avocado lime tart

For the last recipe of this year, I decided to go for the avocado lime tart. You are going to be nicely surprised by its taste. With this recipe, you will discover a new, sweet side of avocado and you are going to love it. The other surprise is, that there is no baking involved. In fact, you “bake” it in the freezer. And I can guarantee you, that this avocado lime tart will be the star at your table for the New Year’s toast.

I would advise you making it in the morning or the evening before and moving it from the freezer to the fridge about one hour before serving.

Ingredients for the avocado lime tart ( Ø16 cm):

  • 20 dates (no stone)
  • 70 g shredded coconut flakes (20 g for final decoration)
  • 110 g of pecan nuts
  • salt
  • 2 limes (juice and zest)
  • 4 avocados
  • 140 g honey

Start with preparing the base of the avocado lime tart. I greased the springform a little bit with some coconut oil. Put dates, pecans, coconut flakes, lime zest from half of a lime and a pinch of salt in the blender and blend until you get a sticky and grained texture.

Then transfer it to the springform, nicely spread it around the bottom and with the palm of your hand press it down, in order to make it more compact. Cover with transparent food foil by placing it directly on the base mixture. Put the springform in the freezer.

Next, prepare the filling. Quickly clean the blender and then put in the avocados (which you have peeled and removed the stone from), lime zest, fresh lime juice and honey. Blend until you get a smooth texture, without any chunks.

Now, take the tart base from the freezer, remove the foil and spread the avocado filling evenly in the form. Take a new piece of transparent food foil and place it directly on the green tart filling, by pressing very gently. Try not to let any air bubbles under the foil. After that, place the springform back in the freezer for at least 2 hours.

Before serving the avocado lime tart, sprinkle it with some coconut flakes. Try it and let me know what it tastes like. We were in five to taste it and nobody guessed the avocado, but some other fruit names popped up. I don’t want to spoil the surprise by telling you which ones.

  1. Just a small update. I have no big experience in vegan food (not YET). So someone told me, that honey is not vegan. Ups…my mistake. But I learned that you can use Agave nectar or Maple syrup instead. Hope you are all going to enjoy it, vegan or not. Cheers.
