Your next delicious meal is only minutes away. I like vegetables, but I also love meat. So I combined the two, with an addition of some exotic coconut flavour. Want to find out how to prepare bacon wrapped turkey tenderloins in cabbage-coconut sauce? All you need to do is follow these easy and quick steps.

You can easily take chicken instead of turkey or even the potatoes if you prefer. I love coconut (milk, cream, flakes, ice-cream) and bacon so much, that I could use them in almost any recipe. Oh, waw, brainstorm incoming! There are infinite variations. And my head is buzzing like crazy right now. Heheheh. However, let’s go back to this recipe.

Ingredients for 2-3 portions of bacon wrapped turkey tenderloins with cabbage-coconut sauce:

  • 300 g turkey tenderloins (breast, medallions)
  • 8-10 slices of bacon (depends on how many pieces you make)
  • 6-8 handfuls of Savoy cabbage
  • 1 tsp of coconut oil
  • 200 ml of coconut milk
  • 200 ml of vegetable/chicken stock
  • 50-100 ml white wine
  • 50 g of parmesan cheese (or any other cheese)
  • ginger
  • salt and pepper

Start with washing the Savoy cabbage and be sure to wash off all the sand and dirt. Then leave it to drain. Prepare also two frying pans.

Next, wrap the turkey. I bought turkey tenderloins; which are thick strips of meat. Wrap one slice of bacon around each piece of turkey. Then add some coconut oil to the pan. Once it starts melting, add the turkey. Fry it for 4-5 minutes on each side or until golden brown. In between add some wine to give an extra aroma to the meat. Don’t worry, the alcohol will mostly evaporate. But you can still serve a glass later with the meal.

In the other pan, add the chopped ginger, cabbage, coconut milk and the vegetable stock.

Looks like a lot of cabbage, right? Well, that “mountain” will disappear in a couple of minutes. Season well, cover and bring to simmer. Instead of Savoy cabbage, you can also use spinach or chard. Then add the cheese and the turkey tenderloins to the cabbage-coconut sauce and cook for another 6-8 minutes.

Serve the bacon wrapped turkey tenderloins with spinach-coconut sauce topped with some sunflower seeds. Oh, this just came to my mind, also coconut flakes would do great. Your pick.
