Berries stuffed sweet potato

Berries stuffed sweet potato is an easy, cozy, delicious and fun recipe. Crispy skin but sweet and soft potato interior, topped with peanut butter, creamy yogurt and fresh bright berries. Simply a delight. Garnished with fresh mint for a zing element. It makes a lovely and healthy breakfast, lunch or dinner idea.

Potatoes, either classic or sweet, are a wonderful food. Without putting in any extra effort you can create beautiful and fancy dishes. For instance, these rosemary smashed potatoes, these beautiful Hasselback potatoes or these cheese-stuffed potato cakes.

Potatoes are great meal solutions, especially for chilly days and nights, when you rather stay at your warm place than head out to eat. Of all the variations, one of my favourites are baked potatoes. Especially, baked stuffed potatoes. Yummy.

Furthermore, a perfect baked potato can make a big difference when making a stuffed potato. It takes time to get a perfect crust and a tender inside. And, unlike regular baked potatoes, you don’t need to wrap the sweet potato in foil. As a result, the edges will get slightly caramelized and a sweet caramelized juice will flow out of the spots where you’ve pricked it.

Oh, this filling and easy to make stuffed sweet potato is such an amazing dish with dozens of variations you can master. In fact, you can stuff them with whatever you are craving. Beautiful. As my savoury variation, I’ve made this gorgeous pink hummus stuffed baked sweet potato.

And now, as a contrast, I’ve made this cute sweet and fruity variation. It is so delicious and suitable for any time of the day, even for breakfast. It’s another amazing vegetarian meal, packed with different textures and flavours, thanks also to cute fruits, crunchy nuts and fresh mint.

Besides being cute, colourful and delicious, these berries are packed with nutrients. Adding berries to your diet will give you a boost of nutrient density.

Blackberries, red currant and fresh mint.

For instance, red currant are tiny berries growing in clusters on sprigs (just like black and white currant). It has a sweet and bright acidic kick to balance out its sweetness. And just like all fruits, they taste best when fresh. More, red currants, as well as blackberries, come equipped with a plentitude of minerals and vitamins, especially vitamin C and K, fiber, iron and antioxidants.

Last but not least, a couple of spoons of the world’s favourite nut butter, peanut butter, and creamy yogurt bring all the flavours beautifully together and make the dish even more enjoyable.

Ingredients for two portions of berries stuffed sweet potato:

  • 2 medium sweet potatoes (washed, peel on, pricked)
  • a pinch of sea salt
  • 1 Tbsp of peanut butter
  • 2-3 Tbsp of Greek yogurt
  • 10-14 blackberries
  • 4 sprigs of red currant
  • shaved almonds
  • a couple of fresh mint leaves

To begin, preheat the oven to 230º C. Wash the sweet potatoes, prick them with a fork (keeping the skin on) all the way around. Then, place them onto a baking dish lined with parchment paper and put them into the oven for 50-55 minutes.

Once the potatoes are tender throughout and you can easily pierce them with a small knife, remove them from the oven and place them onto the plates. At this point, carefully cut them lengthwise in half (not going all the way through) and slightly push the two halves apart.

Furthermore, sprinkle them with some sea salt and add a spoon or two of peanut butter. Then, add the yogurt and top it with washed blackberries and red currant.

Last but not least, top with shaved almonds and garnish with some fresh mint. Serve the berries stuffed sweet potatoes straight away, while still warm and start to dig in.
