Berry butterhead lettuce salad

This easy, delicious and healthy berry butterhead lettuce salad is a perfect idea for a light but satisfying meal. You’ll love the combination of soft butterhead lettuce, fresh berries, aromatic cilantro, creamy cheese and creamy avocado. Yummy.

I love salads. In fact, I could enjoy a salad every day, but sometimes I fancy something else as well. Wink. By combining textures, colours and aromas, you can create plenty of delicious salads. Also, sometimes to make a big change all you need to do is to add one new ingredient. Which ingredient would you add to your salad?

Chicken in the salad is always a good idea. Cheese of any kind, egg, different nuts or tuna are wonderful choices, too. It is your choice how to make your salad special. However, after this salad, you will never go back to the “boring” one ingredient salad. Wink. Try this berry butterhead lettuce salad with a combo of three different berries.

In this case, I used blueberries, raspberries and strawberries. All three are wonderful, beautiful, tasty and healthy. In fact, they are all loaded with antioxidants and nutrients and they are high in fibre. That’s a great reason why you should include berries to your meals.

Moreover, if you are wondering what is butterhead lettuce, that’s lovely soft lettuce. Its leaves are large, round, tender and with a mild sweet flavour. Also, butterhead lettuce is brimming with nutrients and vitamins.

Ingredients for the berry butterhead lettuce salad are:

  • 1 butterhead lettuce
  • a handful of fresh cilantro
  • 1 avocado (sliced or cubed)
  • 120 g blueberries
  • 100 g raspberries
  • 150 g strawberries
  • 100 g feta cheese (cubed)

Ingredients for the dressing:

  • 1 Tsp of honey
  • 6 Tsp of mixed berry vinegar
  • 2 Tsp of olive oil
  • black pepper

Wash the lettuce, drain it and cut or tear apart in smaller pieces. Wash the cilantro, drain it and put the whole sprigs in the salad bowl. Cilantro will give a strong fresh aroma. You can add more than only a handful of it. I used the rest of the cilantro to make a delicious pesto.

Furthermore, prepare the salad dressing. Yes, this berry salad needs a berry dressing. Therefore, mix honey, mixed berry vinegar (or any other fruity vinegar), olive oil and some black pepper in a small bowl. Pour it on the salad.

Next, cut the avocado. With a knife make a cut (lengthwise) in the fruit till you reach the pit. Continue slicing all around the pit. Twist the two halves, take them apart and remove the pit. Then, make cuts in the flesh, without cutting through the skin and use a teaspoon to scoop it out. Add one half to each plate.

Last but not least, add the washed berries (blueberries, raspberries and strawberries) and the creamy Feta cheese. Yummy. Feta cheese pairs great with berries and salads.

Finally, you can serve this lovely and healthy berry butterhead lettuce salad as a powerful meal. Hot summer days are a perfect time to enjoy this salad, maybe in the shadow of a big green tree. And, add as many berries as you like.
