This broccoli egg salad is healthy and quick to throw together just before lunchtime. Combine a couple of boiled eggs and steamed broccoli, topped with crispy bacon, nuts and creamy dressing and you’ll get a delicious, healthy packed lunch. This salad is perfect for dinner, lunch and a summer cookout.
I love salads. There are sooooo many variations to choose from. However, I also love it when there are a creamy egg, bacon and a lovely dressing in a salad. I found all of these and more in this salad recipe. By the way, I’ve found this broccoli egg salad on Paleoleap.
Does that ring any bells? Yes, that means this is a paleo salad recipe. No matter what, you are going to love it. It’s crunchy, colourful and rich in flavour. Moreover, besides being gorgeous and healthy, it will keep you full for hours as well. Pfff. Full after a salad? My answer is yes. Having said that, I could eat two portions. It’s just so darn delicious!
Do you love broccoli?
Before you jump to another page, because you are not a broccoli lover, let me make some suggestions. This salad will still taste amazing if you use cauliflower, Brussels sprouts or carrots instead of broccoli. I love all of these vegetables. If you don’t like an ingredient, simply swap it with another one.

In order that you keep the lovely green colour, steam it or cook it only for a short time. A perfectly cooked broccoli is slightly tender and crispy, not raw and not mushy.
Furthermore, boiled eggs are somehow fascinating. Do you really know how long you should cook an egg? Since I like soft-boiled eggs, I always cook it for 3-4 minutes. It seems to work perfectly. But maybe it depends on the egg. Although there are many ways how to prepare an egg, I decided on a boiled egg (something between soft and hard).
Along with broccoli and egg, I used crispy bacon. In the zucchini corn skewers recipe, I also wished bacon was a spice. Wink. Anyway, bacon wakes up your salty taste buds and completes the whole egg-broccoli flavour.
Watch out for Brazil nuts!
Do you know Brazil nuts? I like them a lot. Moreover, they are a great source of fibre, vitamins and minerals. However, did you know Brazil nuts are also radioactive? Whaaaat?! They contain a small amount of Selenium. Therefore, only a small amount of them should be consumed. Opposite to the peanuts, which you can’t stop eating, you should eat only 3-4 Brazil nuts every few days. Now I know, why you always find only a couple of them when I buy a package of mixed nuts.
In conclusion, a salad always needs a dressing. You will love this creamy dressing. I didn’t use any fancy ingredients. This dressing is a simple combination of oil, lime, mayo and seasoning. All of the ingredients which you have in your kitchen most of the time.
Ingredients for 2 portions of broccoli egg salad:
- 5 Tbsp of olive oil
- 2 tbsp vinegar
- 1 lime (juice)
- 2-3 Tbsp of mayonnaise
- ½ tsp paprika powder
- salt and pepper
- 1 broccoli head (cut into florets)
- 2 eggs (boiled)
- 4 bacon slices (crispy, chopped)
- 1 spring onion (chopped)
- 8 cherry tomatoes
- 6 Brazil nuts (or some other nuts)
Start with making the salad dressing. In a small bowl, mix olive oil, vinegar, lime juice, mayonnaise and paprika. Stir and season by tasting. Put aside.
Then, prepare one larger and one smaller frying pan and one small pot. First, place bacon in the small pan and make it crispy and curly. At the same time, put the eggs to boil. Always start with cold water. Consequently, the eggs will not crack or explode. For last, wash and cut the broccoli into florets. Place them into the larger pan, add some hot water (enough to cover the bottom of the pan) and let it simmer for 4-5 minutes.
Once the bacon is crispy, the eggs are cooked and broccoli is tender yet crispy, you are ready to serve. Nicely stack the florets in two serving bowls and add the chopped bacon and spring onion. Then add a couple of Brazil nuts, cherry tomatoes and drizzle everything with the creamy dressing. In the end, top it with a boiled egg.
