Homemade raspberry yogurt popsicles

Homemade raspberry yogurt popsicles are a great summer treat to cool you down and satisfy your sweet tooth all season long. The amazing filling of Greek yogurt, fresh raspberries and coconut milk makes them a healthy frozen delight. Try something new this summer and surprise your family and friends with these homemade ice pops.

As I mentioned here before, summer is a wonderful occasion for ice cream or popsicles. But let me share something with you. It’s the 300th recipe anniversary for me. Can you believe it?! I am still shocked and amazed, that I wrote so many recipes. I mean, who would have thought so? Not only I wrote the recipes, but I also took the photos, enjoyed the food (yummy!) and shared my thoughts and recipes with you. Mostly I spread my love for food on Social Media like Twitter, the old good Facebook, popular Instagram and Pinterest.

Moreover, you can clearly see the difference between three years ago and now. I can say I hadn’t got a clue about how important the content or SEO is (and what SEO is). With years I got some experience and some knowledge too. “Learning by doing” is the right expression. Wink.

In addition, I am slowly “re-making” my old posts (maybe you’ve seen some updates already). The reason is, some of the early posts are just, how to say, embarrassing and not to mention, not cool.

Regarding cool, let’s go back to the topic of this post. As said at the beginning, I decided on the homemade raspberry yogurt popsicles to be the 300th recipe on PassionSpoon. As usual, I am sharing my thoughts and of course the recipe with you as well. I enjoy my hobby, which is also my passion. A three-ingredient popsicle

Making ice pops is easy and quick. However, the waiting time, for the ice pops to set, is quite long. In other words, it’s torture! You know exactly it needs hours to get set, yet you are still checking it every hour. That’s me. But I have a solution. Make it in the evening and then leave it in the freezer overnight. It’s totally worth the wait. I learned that when I made Nieve and a lovely sorbet. These two summer recipes are refreshing and simple to make as well.

Furthermore, the delicious and healthy ice popsicles are made with only 3 ingredients. Well, 4 if you also add the crumbles. Greek yogurt, coconut milk and raspberries are delicious on their own yet wonderful when combined.

I love raspberries! They smell so sweet and a little floral. When you bite into them, at first you taste sweetness and fruitiness and then comes the light tangy aftertaste. They are perfect for summer desserts.

Before you start, there is just one more thing. This recipe asks for ice popsicle moulds and paddle pop sticks. Instead of popsicle moulds, you can also use something else, like small yogurt cups for example. The shape will change, but the flavour will stay. Moreover, in order to easily remove the popsicle from the mould, simply immerse the mould in a glass of hot water for 15 seconds.

Ingredients for 6 homemade raspberry yogurt popsicles:

  • 300 g Greek yogurt (about two yogurts)
  • 2-3 Tbsp of full-fat coconut milk (from a can)
  • 100 g raspberries
  • 2 coconut cookies (crumbled) (optional)

In a bowl mix yogurt and coconut milk. For the pink colour, mash 5-7 raspberries in a smaller bowl, add a spoon or two of the yogurt mixture and stir to combine.

Next, prepare the ice popsicle moulds in front of you and start filling them up. What is the right way to make a popsicle? There is no right way and no right order. I started with the white mixture, then a raspberry followed with more of the white mixture, another raspberry, then a pink mixture and so on. Go with the flow. Wink.

In the end, place one stick in each mould, (now is the right time to add the cookie crumbles if you decide so) and transfer everything to the freezer. It should stay there for at least 4 hours. But like I said I suggest leaving it overnight.

At this point, all you can do is relax, lick the leftovers out of the bowl and wait.
