Discover the easiest mushroom recipe ever. If you are quick in the kitchen it will be ready in 15 min. You can use this recipe for a main dish, side dish or for a snack. Champignons are simply great. I just got back from Vienna and in a couple of days I am leaving again. So no much time for fancy cooking between doing the laundry and packing. This recipe fits just perfectly.
The ingredients for your champignons list are:
- 6 champignons (medium, ca 220-250 g)
- 3 spring onions
- 50 g of cheese
- 5 Tsp of olive oil
- salt and pepper
I bought the white champignons. You can call them also the button mushrooms. They really look like a big button. Champignons are relatively clean, so all you need to do is rub them with a paper towel. If you think that they are still dirty you can peel them with a small knife. After that gently twist off or cut off the stems. Do not discard them. We will use them for the filling.
Clean and wash the spring onions. Chop them and put half of it in a bowl. Cut the cheese into small cubes. Chop also the stems; try to make them the same size as the cheese cubes. Put everything in the bowl, add half of the olive oil, season with salt and pepper and mix with a spoon. This is going to be the filling for our mushrooms.
Prepare the baking pan, cover it with baking paper and preheat the oven to 200°C. Drizzle the remaining olive oil on the baking paper and add the other half of the spring onions on it. With a teaspoon put the filling on the champignons. You can help yourself also with your hands. Place the champignons in the baking pan (on top of the spring onions) and put it in the oven for 10 minutes on the middle rack.
When serving put the spring onions on the bottom of the plate, then the champignons and finish with a drizzle of the mushroom’s juice. Collect the juice with a spoon from the bottom of the baking pan.
