Pull apart garlic bread

Here is another good recipe for bread. If you like home-made bread and roasted garlic aroma spreading out of your kitchen, then you are going to love the pull apart garlic bread. This bread is puffy and soft and there is no need to cut it. That’s what the name says; all you need to do is pull it apart and eat it. 

The ingredients for one loaf pan of pull apart garlic bread are:

  • 250 g flour
  • 1 egg
  • 1 tsp of salt
  • 20 g butter
  • pepper
  • 1 package dry yeast (7 g)
  • 1 tsp of sugar
  • 150 ml lukewarm water
  • 2 Tsp olive oil
  • 2 bulbs of garlic
  • bunch of basil leafs
  • Parmesan cheese

For the dough beat the eggs. Whisk them until fluffy. In a bowl put the flour, yeast, salt, pepper, sugar and mix them well together. Then add 10 g of melted butter, the egg and oil to the dry mixture and stir with a wooden spoon. Keep adding the water a little at a time. When all the ingredients come together put the dough on your working surface and continue kneading it for at least 10 minutes. When it becomes smooth make a round shape out of it and put it in a bowl (sprinkled with some flour). Cover it with a clean kitchen cloth and keep it in a warm place until double in size. Same procedure as for every bread.

In the meantime roast the garlic. How to roast garlic? Take the garlic bulbs and cut off the top part (0,5 cm). Take some aluminium foil and make a cup. Just fold the foil in half and fold the sides up (2 cm) to create kind of a wall of the cup. Put the bulbs in the “cup” and drizzle it with olive oil. Then put it on a baking tray and in the oven(250°C) for 40 minutes. When it’s done take it out of the oven and squeeze the cloves out of the bulbs. You can also use a small fork to pick them out. Put them in a small bowl and mash them with a fork.

In a small pot melt the other half of the butter. While you will prepare the dough, the butter will cool down a little.

By now also the dough should be ready; nice fluffy and soft. Sprinkle some flour on the working surface and roll out the dough. I made a square shape 30 x 50 cm. Now spread the melted butter on it (you can use a kitchen brush), garlic, basil leaves and the cheese.

Take a big knife and cut the dough lengthwise in 6 cm large stripes. Stack the stripes on on top of each other and cut them into squares. Every 6 cm or so make a cut. Take a loaf pan and brush it with some olive oil or just cover it with the baking paper. Stack the dough squares in the loaf pan (not with the flat side up but so that you see the layers. Put the squares next to each other and leave it for 20 minutes to rise again. Then sprinkle it with some olive oil and put to bake for 40 min at 200°C.

After 40 minutes take the bread out of the oven and remove it carefully from the loaf pan. Serve the warm pull apart garlic bread heaven with some soup or salad.
