I love Mexican food and I get inspired by it quite often. There is so much to choose from; nachos, tortillas, salsas, tacos, margaritas and moles (just to mention a few). Viva Mexico! So many flavours and a big variety of dishes. Don’t you just want all? Hehehe. However, this time I picked chicken tortilla wrap.

Tortillas are just a small wonder. Every time you change the method of folding them, you create a different dish. Moreover, with a tortilla you can make tacos, enchiladas, burritos, fajitas, quesadillas and last but not least wraps. How versatile! Isn’t this simply amazing?!

What is a wrap? Basically, it’s a sandwich-like snack with a tortilla rolled around the filling. In this recipe, the filling consists of chicken, juicy tomato salsa and a homemade guacamole. It’s simple, quick and full of flavours.

Ingredients for two portions of chicken tortilla wrap:

  • 200 g chicken (breasts, medallions, boneless)
  • 3 limes
  • 1 avocado
  • 2 wraps
  • 3 tomatoes (medium big)
  • 3 Tbsp of sweet corn
  • 4 shallots (2 for salsa, 2 for guacamole)
  • chili (optional)
  • parsley or cilantro
  • olive oil
  • salt and pepper

Start with making the tomato salsa. Nothing too complicated, but the flavours are amazing. Wash and dice the tomatoes. Peel the shallots and chop them finely. Wash and roughly chop the parsley or cilantro. Combine everything together with sweet corn in a bowl, season with salt and pepper, squeeze 1 lime and drizzle with some olive oil. Mix it and leave the tomatoes to marinate and to absorb all the flavours.

Next, it’s chicken time! Preheat a griddle pan, tap the chicken with a paper towel and then rub it with olive oil. Sprinkle the chicken with salt and put in the hot pan for about 10 minutes or until golden brown on both sides.

How to make guacamole:

At the same time, you can prepare the guacamole. Mmmmm, I could eat it all the time. I love avocados! This is really easy and quick. Halve the avocados, remove the pit and spoon out all of the creamy flesh. Put it in a small bowl and squeeze one lime on it. Furthermore, mash it with a fork. I prefer some texture in it (so I left some chunks in it), but if you like, you can make it completely smooth. Chop the shallots into really fine small cubes. Add them to the avocados together with a pinch of salt and some pepper. Mix and cover with foil.

One last thing to do. Brush the tortillas (one side only) with some olive oil. Just before serving, place the tortilla (oily side down) on a griddle pan. You can use the same pan where you made the chicken. After the chicken is ready, put it on a plate and quickly clean the pan using a paper towel. Then place in the tortilla and after 20-30 seconds it will get a nice stripy texture.

Finally, you are ready to serve. Start with guacamole, topped with chicken and the tomato salsa. Add some parsley or cilantro and optionally chili slices. That’s a wrap! Make this chicken tortilla wrap at any fiesta or whenever you fancy a delicious meal.
