A delicious and light coconut vanilla popcorn is a perfect snack for a long Oscars night. This easy recipe will have you licking your fingers. Wink. Also, it’s fun and so quick to make, that you can enjoy a fresh bowl of popcorn each time you wish for it.

Oscar week is here! And what better way to enjoy it than with some homemade coconut vanilla popcorn. Since my boyfriend and I watch a lot of movies at home (btw, you can check out his YouTube channel here), popcorn is a must!

Oh, and speaking of movies…which one is your favourite? For which movie would you make this delicious coconut vanilla popcorn? I would choose “Julie and Julia”, my favourite cooking movie, “Eat, Pray, Love” as a girly movie or any movie with Tom Hanks in it.

I just love Tom Hanks as an actor. Forrest Gump is a masterpiece, all Robert Langdon adventures are just fantastic and the scenes with his “friend Wilson” are unforgettable. Just like this coconut popcorn. The Oscar ceremony always goes on until late at night. Therefore, be ready to make a lot of popcorn during the commercials. He he he.

How to make popcorn on your stove

Coconut vanilla popcorn is one of the easiest and the fastest snacks to make. And there is nothing more exciting than listening to the kernels popping up. Moreover, it is healthy and you can make it directly on your stove.

Today I will show you the “secrets” how to make perfect popcorn at home. It’s so tasty that you just can’t stop eating it! And the best thing is, that you don’t need any fancy equipment to make the best popcorn ever. All you need is a large saucepan, popcorn kernels and some oil. It just can’t get any easier!

As said, I made coconut vanilla popcorn. Yummy! How much do you like coconut? I adore it! It’s always an amazing moment when the whole house smells like popcorn. Now, imagine the aroma of coconut vanilla popcorn expanding around your home. Divine!

Do you get annoyed with burnt popcorn kernels and a possibly “ruined” pan? You won’t need to worry about that, after following this coconut vanilla popcorn recipe. In order to keep your pan intact, simply lay a piece of parchment paper in it before starting with the recipe. Like this, it will keep the pan “clean” and nothing will get burned. As you can see, parchment paper is not only good for baking.

Ingredients for a medium bowl of coconut vanilla popcorn:

Take a larger heavy-bottomed saucepan and lay a sheet of parchment paper in it (this is optional). The pot should be large in order to have space for all the popcorn that expands. Moving on, place the coconut oil in the pan and melt it on medium-high heat. Place one popcorn kernel in it. Cover with a lid and wait.

Once the kernel pops, remove the pan from the heat and the popped kernel from the pan. Then, quickly whisk in the coconut sugar and the vanilla extract. After the sugar has dissolved, add the kernels, stir in order to cover all of them with oil and let them sit for 30 seconds. Consequently, the kernels will heat up evenly and there will be more chance to get all of the popcorn kernels to pop.

Furthermore, place the saucepan back on the stove on high heat, cover with some aluminium foil (make some holes for the steam to escape) and wait for the first pop. I love the popping process! The popping will start slowly at first but will get crazy fast within a few minutes. The important thing is that you give the pan a shake every 10 seconds and prevent the popcorn from burning.

When the popping slows down or almost stops, remove the foil and the pot as well from the stove and let it sit for one minute. Who knows, maybe the last kernel will still pop.

Finally, transfer the popcorn to a bowl and toss with a pinch of salt. Yes, I know coconut, sweet and salt together form a weird combo. However, salt makes the flavours pop out even more. Now make yourself at home with the coconut vanilla popcorn on the couch and let the show begin!
