Get addicted to this wonderful Greek watermelon feta salad. It’s a light and delicious summer lunch that’s bursting with sweet watermelon, black olives, tomatoes and salty cheese. The combo of sweet and salty, fruity and cheese will win you over.
Summer is still a couple of months away. But, I wanted to open the summer season a bit early. Wink. Therefore, I am sharing this gorgeous and delicious summer salad with you. It’s literally summer on a plate. You’ll fall in love with it. In fact, I am warning you! You’ll get addicted to it. Which, by the way, is a great thing.
Watermelon is so much more than just a summer fruit. It’s colourful, delicious, sweet, healthy and incredibly versatile. In fact, you can enjoy it just as it is, you can make a fruit salad, a sorbet, you can grill it (even though it sounds weird, grilling water. Haha), you can serve it in a smoothie or in a cocktail or you can serve it in a salad.

I love food that you can eat with your hands. For instance, chicken wings, drum sticks, pizza, spare ribs etc. Therefore, I added watermelon triangles to this salad to enjoy them straight with your hand. It makes it more interesting and more fun. Wink.
This summer salad is a real explosion of flavours. In fact, it’s sweet and salty at the same time. Does that go together? Yes. Just think of salted caramel. Right? Yummy. And, did you know, that a small pinch of salt on a pineapple slice makes it even sweeter? Amazing, right? Sweet and salty combo rocks. Wink. Give it a chance and try it out.
Ingredients for 3-4 portions of Greek watermelon feta salad:
- 400-500 g of watermelon (cubed)
- 10-12 plum or Roma tomatoes (halved)
- half of a cucumber (diced)
- 15-20 black olives (pitted)
- 100-150 g feta cheese
- a handful of fresh basil leaves
- Juice of one lime
- 2 tsp of honey
- 2 Tbsp of olive oil
- coarse or flaky sea salt
To begin, wash the tomatoes and halve them. Wash the cucumber and cut it into cubes. Then, wash the watermelon (to prevent spreading the germs from the outside to the inside) and cut about one-quarter of it. Store the rest in the fridge for a later snack and some other dish. Now, cut the watermelon into cubes or medium-sized chunks.
Furthermore, prepare the dressing. In a small bowl, squeeze one lime, stir in the honey and olive oil. Put aside for later. Also, drain the olives and prepare the feta cheese. I crumbled it directly onto the salad just before serving, but you can dice it as well.
Finally, put the Greek watermelon feta salad together by combining all of the vegetables and fruits in a large salad bowl or on a large serving plate. Drizzle with dressing, top with feta cheese and toss gently. Then, sprinkle with some sea salt and basil.
