Watermelon look-alike ice popsicles

Make some fun and delicious ice popsicle this year. Summer is the time of colours, fruits and freshness, which is a great description for these fun “watermelon” look-alike ice popsicles. But here comes the surprise. They are made out of frozen raspberries, crunchy chocolate drops, Greek yogurt and fresh kiwis. A perfect summer treat.

A heatwave just reached Europe. Man, it’s hot in here. Therefore, I have a great excuse (like I needed one) for more delicious ice popsicles. However, this time I was a bit more creative and I played with the flavours and the looks.

In fact, the popsicles look doesn’t resemble the flavours. They simply don’t match. Wink. Let me explain what I’m talking about. Even though they look like watermelon slices, they taste completely different. For the watermelon flesh I used raspberries, for the white part of the rind, I used yogurt and for the green rind part, I decided on kiwis.

Moreover, I know (and I mentioned it in some of my previous posts too) that nowadays watermelons are mostly sold seedless, yet I wanted the classic or call it “old school” look of the watermelon. Therefore, I used chocolate drops to resemble the seeds.

This watermelon look-alike ice popsicle recipe asks for 3-step freezing. Each layer needs to be partly frozen before adding the next layer. In the first layer (from the perspective how you fill-up the molds), I used frozen raspberries because they don’t release so much juice as the fresh ones and since they are frozen, they freeze quicker, too. Wink.

Raspberries are very low in calories but very high in antioxidants, vitamins, fiber and minerals. In fact, they come with plenty of health benefits. Besides that, they also taste wonderful; a bit sour, tangy, sweet and extremely fresh and fruity.

To resemble the watermelon seeds, I picked dark chocolate drops. And guess what? Chocolate belongs to the same group as the two fruits just mentioned above. Yes, dark chocolate is one of the best antioxidants on Earth! Woohoo! Having said that, it should still be consumed in moderation.

Furthermore, also the thin white line of yogurt, as the second layer, brings some health benefits to your body. Greek yogurt is rich in probiotics, protein, calcium and vitamin B12. I also like it because it’s extremely creamy and thick. You can use it for dips, when making yogurt cream cheese or as topping for stews, vegetables or meat. Yummy!

As the last healthy layer and ingredient, we have the “hairy” fruit, called kiwi. Wink. Also, this is sweet and tangy and packed with vitamins (C, K, E), fiber and antioxidants, just like raspberries. In addition, eating a kiwi in the morning gives you a real energy boost for a great morning start.

Making these, was such fun and a truly delight eating them.

Ingredients for 6 watermelon look-alike ice popsicles:

  • 250 g frozen raspberries
  • 2 Tbsp of dark chocolate drops
  • about 100 g of plain Greek yogurt
  • 2 kiwi fruits

To begin, prepare the first, dark pink layer. Put the frozen raspberries into a food processor and blitz until smooth. If the mixture results too thick, simply add a spoon of milk or yoghurt. Then, carefully remove the blade and stir in the dark chocolate drops.

Using a spoon, fill up 3/4 of the ice-popsicle molds. In order to get a lovely watermelon look for the finished product, carefully clean up the mould with a paper towel by removing all of the raspberry splashes up to the edge. At this point, place one wooden stick in each mold and put all together in the freezer for at least 1-2 hours.

Afterwards, take the molds out of the freezer, add around 2 teaspoons of plain Greek yogurt to each mold and spread it evenly on top of the raspberry layer. Put the molds back in the freezer for about 1 hour.

Last but not least, peel and blend the kiwi fruits. Also, this is a good time to add some honey to the fruity mixture, if you wish. Furthermore, take the molds out of the freezer one more time and spoon the kiwi pulp into each mold by filling it up to the edge. Put them back in the freezer for at least 4 hours or overnight.

Finally, take the watermelon look-alike ice popsicles out of the freezer, let them sit on the counter for 1 minute and then easily remove them from the mold. They are a wonderful cooling treat on a hot summer day. A fruity, healthy, colourful and delicious ice popsicle, that you’ll want to make over and over again.
