Halloween stuffed peppers are a delicious and fun meal. Soft cauliflower, melted mozzarella cheese and creamy avocado make these stuffed peppers different. They are healthy, light, flavourful, creative and simply beautiful.
I love stuffed peppers. But these are special; they are spooky and festive! It makes no difference to me if they are either red, orange, yellow or green. They all come in fabulous colours and amazing flavours. However, I picked the red ones, as being the ones with most vitamins (so “they” say).
I really enjoyed making these Halloween stuffed peppers and I enjoyed eating them even more. Hehehe. I am sure you are going to love them too! Are you ready? As you can see the recipe is very easy to make. Maybe there is one, just one, tricky part. And with this, I mean carving the faces into the bell peppers.
In order to make it easier, I drew some face examples on a paper first and then, using a small knife, I carved the eyes, nose and mouth. There are unlimited variations. So, go on and get creative!

Ingredients for 4 Halloween stuffed peppers:
- 4 red bell peppers
- 1 cauliflower head (ca 1kg)
- 200 g mozzarella cheese (shredded)
- salt and pepper
- 1 avocado (ripe, but not too soft)
First, clean, cut and chop the cauliflower into smaller pieces. Put to cook until soft. Then drain and put aside. The filling is not a typical one with minced meat, rice and tomato sauce. Instead, I chose cauliflower and cheese. And in the end, I added also some creamy, healthy avocado cubes.
Next, with a sharp knife carefully cut off the top of each bell pepper. But do not discard the tops. Then remove all the seeds and white parts inside the peppers. Wash them and carve small holes to form faces.
Furthermore, cook the bell peppers in a deep pot for about 10-15 minutes. They should be cooked, but still “al dente”. Once they are ready, take them out of the pot and place them on some paper towels to drain.
Preheat the oven to 200ºC.
Now cover a baking dish with parchment paper and place the peppers on it. Let’s prepare the filling. This is the easiest filling that you’ve ever seen and made. Mix the cauliflower with shredded mozzarella and season well. Done! Now, fill the bell peppers almost to the top.
As for last, cut the avocado in half, remove the pit and cut it into cubes. Then place the cubes on top of the cauliflower filling and sprinkle with some more cheese. Place the bell pepper tops back on and put the baking dish in the oven. Bake for about 15 minutes or until the cheese starts melting.
One more thing to do. Serve these Halloween stuffed peppers when still steamy and hot. Serve them along with your other Halloween snacks. You will love the creamy cauliflower filling. And the cheese, melting through the carved faces, will make a great spooky effect. Fabulous! I love them! Do you?
