I’m introducing to you my new healthy leek-quinoa bowl. You’ll love it! Use this superfood from the Inca times to make an easy, satisfying and healthy meal. This variation of quinoa bowl combined with oats, sweet grapes and leek should be on either your lunch, dinner or breakfast menu. In other words, it’s a super bowl full of superfood.
Did you know there is more than just white quinoa? There is red and black quinoa too. You can find a mix of all three at your supermarket. In fact, I bought a tricolore mix. It s just lovely and your dishes look vibrant and beautiful.
Moreover, quinoa became very trendy in the last decade and it got on the list of superfoods. However, quinoa was a superfood long before some nutritionists or movie stars made it famous. And I am talking about thousands of years ago in the Inca period.

There is a quinoa bowl for each one of you. After some brainstorming, I decided on a sweet and savoury variation. Like I always say, I love to incorporate fruits into my dishes ( for example, check out this delicious summer salad, the amazing pineapple express, the creamy banana chicken or the fun sausage skewers. As a result, this combo of sweet grapes, savoury leek and tender artichokes is just amazing. Lovely!
Reasons why you should eat quinoa
Furthermore, quinoa bowls are incredibly versatile. In fact, you can throw together whatever you are craving for at that moment. For instance, you like fruits a lot. No problem, add them to the quinoa bowl. Do you fancy vegetables? Put them in the bowl. Are you a meat or fish lover? Guess what….add them to the quinoa bowl.
In addition, you won’t need much time to prepare a delicious and healthy quinoa bowl. It’s quick, easy and there is no way you can go wrong.
Not only does quinoa come in a fun shape, lovely colours and has a nutty flavour but it is incredibly satisfying as well. When cooking it, it increases three times in size. Similar to rice, when you always think it’s not going to be enough. It will be enough, indeed.
More importantly, quinoa is healthy. Moreover, it is rich in fibre, protein, vitamins, calcium, magnesium, iron and more. It is a superfood. With making this healthy leek-quinoa bowl, you’ll get a complete meal packed with proteins, grains, vegetables and fruits. A bowl loaded with goodies.
In addition, besides quinoa I also used oats. The reason why I used oats is that I simply wanted even more texture in this dish. Is that even possible? Yes, it is. Wink.
In conclusion, add quinoa to your dishes. Use it in a salad, when baking bread or muffins, put it in a burger or enjoy it either for breakfast, lunch or dinner.
Ingredients for 2 portions of healthy leek-quinoa bowl:
- 170 g quinoa
- 3 Tbsp of oats
- ¼ – 1/2 leek
- 6-8 artichoke wedges (from a glass)
- 20-30 grapes
- salt
- olive oil
Before anything else, prepare the quinoa. Rinse it under cold running water and then put it to cook. I always use 1:2; where one is quinoa and two is water. In other words, just use double as much water than quinoa. Usually, it takes around 20 minutes to be cooked.
Meanwhile, you can prepare the rest. To be honest, there is not much to do. That’s why I love this dish. You get a wonderful meal with minimum effort.
Anyhow, wash the grapes and the leek. Cut the leek into thin round slices. That’s about it. He he he. I shouldn’t call this a recipe, right?
Once the quinoa is cooked and it gets that lovely fun „number 9” or “comma“ look, add the oats. In case there is no more liquid, add 2-3 spoons of water. That will make stirring and soaking the oats easier.
Finally, season with some salt, drizzle some olive oil, add the leek, artichokes and grapes. Toss well and you are ready to serve the healthy leek-quinoa bowl. Yuhey! This is a lovely dish made in less than 30 minutes. It is perfect for any time and any meal of the day. It’s also a good idea for a lunch to take with you to work because it tastes yummy either warm or cold.
