Omg, you have to check out this paleo nut and seed bread! Packed with seeds and nuts, which will help you feel full between meals, make this bread healthy, vegan, keto-friendly and gluten-free. Maybe, this will become the one and only recipe you’ll ever need when making bread from now on.

I know, I know. Bread again. I shared a great bread recipe a couple of posts ago. If you missed the Mediterranean sun-dried tomato and olive bread, check it out. Wink. However, I have to share this amazing healthy bread with you, guys. It’s just wonderful and so easy to make. Also, it’s a great healthy alternative to any everyday flour bread. Why? Because it’s made entirely only out of seeds, oats and nuts.

As the name already says, this loaf of bread is a combination of seeds, oats and nuts. When choosing the ingredients, try to use different sizes of seeds and nuts. As a result, the bread will have a wonderful texture. Of course, you can find a ready-made mixture in the shop. However, I find it too expensive and also, you can do it easily yourself at home.

Seeds, oats and nuts

The best thing about this paleo nut and seed bread is, you only need a mixture of seeds, oat and nuts, soak it in water for at least 3 hours (or even better overnight) and bake it. That’s right, you don’t need yeast to make it rise or flour or even eggs to make it stay together.

Furthermore, before baking 10 loaves of this bread, I made a test. For this first attempt, I made a small bun. It turned out ok, but not great. The reason was because of too many flax and chia seeds. Consequently, the bread was too wet.

On my second attempt, I combined a larger amount of oats and sunflower seeds and smaller quantities of flax and chia seeds. Also, I added different nuts: hazelnuts, almonds and walnuts. The quantities were perfect.

In addition, I calculated the proportion of water to dry ingredients. You need just the right amount of water to soak the seeds, oats and nuts. As a result, I found the proportion 1:1,2 works great. In other words, on every 120 gram of dry mixture, you add 100 gram of water.

Moreover, the seeds soak the water and expand. Consequently, this is what holds the whole bread together. Especially chia and flax seeds are the best to hold your bread in one piece. Therefore, just as I said, there is no need for flour or eggs.

Ingredients for a loaf of paleo nut and seed bread:

  • 150g oats
  • 150g sunflower seeds (and some for topping)
  • 1 Tbsp of chia seeds
  • 1 Tbsp of shredded flax seeds (I chopped them myself)
  • 3-4 pinches of salt
  • 60 g roughly chopped nuts (walnuts, almonds, hazelnuts)
  • 320 ml of water

First, prepare a bowl, second, weigh out all of your ingredients, third, combine all in the bowl. Remember to put the salt as well. Pour in the water and mix it with a wooden spoon to combine well. While the bread mixture is soaking, grease the loaf pan with some butter.

Then, transfer the bread mixture in it, smooth it with the back of a spoon, sprinkle with some more sunflower seeds on top and let it sit for at least 3 hours. I let my mixture soak for six or seven hours.

Afterwards, preheat the oven to 190º C (usually 10-15 minutes before you want to start baking). Once it’s hot, put in the loaf pan and bake for 30 minutes. Then, lay a piece of aluminium foil on top (only to prevent the direct heat from the top) and bake for additional 40-50 minutes.

When the bread is baked, turn off the oven and leave the bread in it to gradually cool down. Finally, take the bread out of the form and cut it in slices. You can serve the paleo nut and seed bread at any time of the day, as well as for a snack. Not only it goes great with sweet or savoury toppings, but it also tastes delicious on its own.
