Peachy pork

In some of the previous recipes, I said that pork goes great with fruits. This time I combined it with peach. That’s something you normally wouldn’t think of. Pork with peach? Hmm, that’s new. I made it, tasted it and I loved it. Try this “Peachy pork” recipe and you will discover a new way how to use peaches or nectarines. Pork, sweet peaches, onion, ginger, honey and spring onion make a great combo and will lead to an explosion of flavours in your mouth. This one pot dish is perfect for lunch or dinner and it takes tops 25 minutes to make.

Here are the ingredients for 2-3 portions:

  • 500 g of pork meat (cubes or small pieces)
  • 3 peaches (firm and not too ripe)
  • 2 red onions
  • a piece of ginger (3×3 cm)
  • 2 Tbsp of honey
  • 1 green pepper
  • 2-3 small tomatoes (without skin)
  • 1 spring onion
  • 2 tsp of coconut oil or Ghee (I used Brandy butter)
  • salt and pepper

Prepare a big pan. Start cleaning the veggies. Peel and chop the onions and ginger. By the way, do you know what is the easiest way to peel a piece of fresh ginger root? Try using a tea spoon. Simply scrape the peel off with the edge of the spoon.

Next, wash the peaches and cut them into wedges. I described in a previous recipe how to cut a peach very easily. Wash the green pepper and the spring onion. Clean and cut the pepper in strips and chop the spring onion into 3mm thick pieces. I like to cut it at a 45º angle so they look a little bit fancier.

Melt the butter in the pan and add the onion and ginger. When the onion becomes glassy, add the meat. Season it and cover for ca 5 minutes. Give it a stir, cover and leave for additional 5 minutes. Then add the peaches with some honey. Cover again and cook for 5 minutes. At the end add the tomatoes and the green pepper. Cook for another 5 minutes. Taste the meat. If it’s soft, the dish is ready.

Serve the “peachy pork” in a deep plate, with some spring onion on top. Now you’re ready to discover some new flavours.
