Peppery raspberry arugula salad

Summer is coming earlier this year. This peppery raspberry arugula salad is calling for it. Spicy arugula paired with sweet tomatoes, tart raspberries and mozzarella and tossed with a homemade salad dressing. It makes a great light lunch or dinner.

Salads are one of the simplest and most creative dishes I know. The range of ingredients is unlimited. Seriously. You can add anything to a salad, from meat, fish, eggs to cheese and fruits. Besides, you can combine only cooked, fresh or only grilled components or a combination of those.

I understand that some people don’t like arugula. But why? Is it too spicy? Well, you better start eating this wonderful dark leafy green, because it’s a good source of calcium, which keeps your bones and muscles healthy. More, it contains vitamin B and other nutrients beneficial for your body, too.

Add a fruity component

Also, it’s a wonderful green to pair with something fruity and sweet. Therefore, I added fresh raspberries and cherry tomatoes and, I made a fruity salad dressing, as well. As the salad is very simple, it needs a great dressing that brings all of the flavours together.

You can create this delicious dressing in just one minute. Combine all of the ingredients, blend and it’s done. So quick and easy. You’ll love it. Remember, add the dressing only moments before serving or else your salad will get a bit soggy. Ew, we don’t want that. Wink.

Furthermore, if you are one of my followers, you’ve noticed that I love to add a fruity component to my salads. I think they add beautiful colours and flavours to a salad bowl. These are just some of my favourite salad recipes: melon-arugula salad, spring blueberry arugula salad, lovely spicy mango-avocado salad, crunchy apple-carrot salad, colourful and fun Rubik’s cube salad or this asparagus-strawberry salad. Yeah, I simply can’t decide for only one. Wink.

Are you a raspberry lover just like me? These small, sweet and sour berries are ideal to add to any meal. In other words, they make a tasty addition to your breakfast bowl, lunch, dinner or dessert.

Here are some of my recipes with raspberries ideal for sunny days: mango-coconut-raspberry popsicles, healthy beetroot-raspberry detox soup, pink raspberry smoothie, beautiful choco raspberry-coconut cups and these homemade raspberry-yogurt popsicles. Summertime is calling!

Ingredients for two portions of peppery raspberry arugula salad:

  • 3 handfuls of arugula
  • 200 g cherry tomatoes
  • 250 g raspberries
  • 1 tsp of mustard
  • 1 tsp of lemon juice
  • salt and pepper
  • 1 Tbsp of olive oil
  • 2 tsp of balsamic vinegar
  • 1 mozzarella (sliced)

To begin, wash the arugula and let it drain. Wash the cherry tomatoes and cut part of them in half and the remaining ones into slices. Then slice the mozzarella and prepare the dressing.

Tart raspberries pair great with the peppery arugula, mozzarella and tomatoes. A lovely touch gives the homemade salad dressing.
Sweet-sour small pink berries.

For the dressing, combine half of the raspberries, mustard, lemon juice, salt, pepper, olive oil and balsamic vinegar. Using an immersion blender blend for 20 seconds or until smooth and well combined.

In conclusion, nicely arrange arugula and cherry tomatoes onto two plates. Then, top them with mozzarella slices and remaining raspberries and drizzle with the raspberry-mustard dressing. Serve this lovely peppery raspberry-arugula salad for lunch or as a light dinner.
