Pork chops with sweet peaches and garlic

For your next pork recipe make these pan-seared juicy pork chops with sweet peaches and garlic and with a vibrant warm salad on aside. You’ll love this combination. Also, this one-pan meal is easy and really quick to prepare. Therefore, it’s perfect for a mid-week dinner or a warm comfort lunch on a cold day.

It’s been a while since I’ve made pork chops. Do you now that pork chops are leaner than other pork cuts? That being said, pork chops have a lovely layer of fat on the edge. Now, don’t run away from this page, simply cut the fat off. Wink. However, you can make that fat crispy and delicious by simply making small cuts into it.

Moreover, almost always I find pork chops containing a rib bone. That’s just great; like eating a chicken wing. Yeah, I enjoy eating and sometimes it’s fun eating with your hands. Now, I already said, the pork chop is a lean cut. Therefore, you need to be careful not cooking it for too long or else you’ll get a slice of dry and chewy meat.

Pork and peaches

Also, pork is paired mostly with apples. However, in this recipe, I paired the pork chops with sweet peaches. Moreover, I used canned peaches. And the reason, I used peaches from a can is simple; November is not the peach season. Wink.

Canned peaches are delicious and they come really handy in the cold months. They are already peeled, halved, pitted, but most importantly, they are preserved in a sweet syrup. Yummy. In fact, I used this syrup to add some lovely sweetness to the garlic and pork chops.

Furthermore, for additional flavour, I used fresh garlic and fresh oregano. Do you like garlic? I love it. However, I am not a big fan of raw garlic. Nope. My favourite garlic is sweet as candy, tender and oven-made. Wink.

Fresh herbs are so much more aromatic than the dry ones. And the oregano’s aroma is fabulous. On the other hand, you can also pick thyme or rosemary instead. They are both really aromatic and go perfect with pork and peaches.

Ingredients for two portions of juicy pork chops with sweet peaches and garlic:

  • 2 pork chops
  • butter
  • olive oil
  • 4 garlic cloves (thinly sliced)
  • 4 peach halves (canned peaches)
  • fresh oregano
  • 150 g frozen peas
  • 100 g frozen green beans
  • fresh chili
  • 1/2 tsp of lemon zest

Using a sharp knife, make some criss-cross cuts in the layer of fat (the white layer on the edge). Then, season with salt and pepper on both sides and place both pork chops, fat edge down, in a cold pan. I needed to hold them with a pair of tongs, in order to properly transform that lovely fat into a crispy crust.

After the layer of fat gets crispy and golden brown, sear the pork chops for 4 minutes on each side. Additionally, I added some olive oil and a small piece of butter, too. At the same time, thinly slice the garlic, prepare the peaches and the fresh oregano. Once the pork chops are well seared, remove them from the pan, but keep the pan as it is. In other words, don’t clean the pan.

Garlic and sweet peaches

Furthermore, using the same pan, add the sliced garlic and peach halves to the pan. When the garlic starts getting tender, add 3-4 spoons of the peach syrup (from the can). You might shake the pan in order to spread the syrup evenly around it. Cook for 3 minutes.

Frozen green peas and beans have to be in your freezer all the time.

Meanwhile, prepare the lovely greens. In a smaller pot or pan add some butter, frozen green peas, frozen green beans, salt and a couple of splashes of water. Cook or steam until warm. It will take around 5 minutes to be ready.

In the end, put the pork chops back in the pan, together with fresh oregano and cook for 1 minute. Finally, serve the juicy pork chops with sweet peaches and garlic together with lovely and simple green peas and green beans on aside. Also, I topped the warm greens with some fresh chili and lemon zest. Simply delicious!
