Potato pear soup

Potato pear soup

Potato soup is like a classic. Wouldn’t you say so? I like to make potato soup often. But at the same time, I always try to improve the taste by adding an ingredient that would make a difference. This time I added a sweet pear. This potato pear soup is a great combination of something earthy and something fruity.

In addition, I also used some bacon for the crunch and some chili for the heat. Potato, pear, bacon, chili; this sound like the perfect “team” to me.

Ingredients for 4 portions of the potato pear soup:

  • 3 garlic cloves
  • 4 big potatoes
  • 2 pears (Williams)
  • olive oil
  • 2-3 slices of bacon
  • chili (chopped)
  • salt and pepper

Prepare a deep pot and a small saucepan. Clean and chop the garlic. Wash, brush and cut the potatoes. I used young potatoes, therefore I left the skin on. Then wash and cut the pears, leaving ¼ of a pear for garnishing. Also here I left the skin on.

Now, that everything is prepared, turn on the stove and drizzle some olive oil in it. Once the oil gets warm, add the garlic. After a minute add the potato cubes and pear pieces. Stir-fry for a couple of minutes and then cover with about 0,7-0,8 l of hot water. Season, bring to boil, reduce the heat, cover the pot and let it simmer for 20 minutes or until the potatoes become tender.

In the meantime preheat the small pan, place the bacon in it (without any additional oil) and make it crispy. It’s simple; when the bacon starts shrinking and curling it means it’s ready. Transfer the bacon on a paper kitchen towel, in order to absorb all the fat in excess and then cut each slice into 4 pieces.

Once the potatoes are ready, use an immersion blender to mix everything well together, in order to get a nice creamy soup. Put the pot back on the stove for a couple of minutes, then cover and remove.

Slice the remaining ¼ of a pear into wedges or thin slices or you can also cut it into small cubes. Divide the potato pear soup between four plates and serve with a couple of pear slices and some crispy bacon. At the end sprinkle some fresh chili on top.

Enjoy!
