Strawberry-nectarine smoothie bowl

It’s been quite some time since I last wrote a smoothie recipe. Well, more than a recipe, it’s an idea what to put together in a blender and what to use as toppings. If you like fruits, you will love this strawberry-nectarine smoothie bowl. As you can see, already the name says it all; a lot of strawberries and nectarines.

In addition, I also used some fresh ginger, to give this smoothie bowl an extra kick. And the unusual topping is strawberry mint. Yes, a mint with a strawberry flavour and aroma.

Ingredients for 2 portions of strawberry-nectarine smoothie bowl:

  • 3 nectarines
  • 400 g fresh strawberries (10 for toppings)
  • 30-40 ml almond milk
  • a piece of fresh ginger

Ingredients for toppings:

Prepare the blender, a small knife and wash all the fruits. Cut the nectarines into wedges, cut off the top of the strawberries and peel the ginger. Chop the ginger into smaller pieces, in order to make the blending easier. Put all the fruits (except 10 strawberries), ginger and the almond milk in the blender and blend for 30 seconds.

Once you get a nice smooth consistency, divide the smoothie into two bowls. Serve each strawberry-nectarine smoothie bowl topped with crunchy granola, quinoa pops, five strawberries and the amazing strawberry mint leaves.
