Potato soup with snow peas

I posted quite some potato soup recipes on my blog. I think soup is something really easy and delicious to prepare. You can never go wrong with potato soup. Try this potato soup with snow peas and spice up your menu.

Potatoes are very versatile, even though they are very humble. I love them and consequently, I use them quite often. I will not spend time explaining that I like them baked, mashed, fried and so on. The ways of cooking potatoes are endless. But, let’s go back to the actual recipe. You would say, that potato soup is boring. Well, not necessarily. With a few tiny, let’s call them “special” ingredients, you make it even more delicious and different.

The special ingredients in this soup are ginger and snow peas. Ginger will add some spiciness and the snow peas give the crunch and sweetness. On top of this, they are both rich in vitamins.

Ingredients for about 4 portions of potato soup with snow peas:

  • 5 large potatoes
  • 1 onion
  • a piece of ginger (3 cm)
  • 800 ml of vegetable broth
  • olive oil
  • 200 g frozen green peas
  • ca 30 fresh snow peas
  • salt, pepper

You will need a larger pot, an immersion blender and vegetable broth. I usually make vegetable broth in advance. And it is always a good idea making a bigger quantity of it and then freeze it for a later use. Nothing difficult; all you need is some vegetables and water. Peel the potatoes and cut them into cubes. Clean, peel and chop the onion and ginger. Drizzle some olive oil in the pot. Once it gets hot add the ginger, onion and potato cubes. Keep stirring it for about one minute. Then pour in the hot vegetable broth and bring it to boil. The potatoes won’t take long to cook, as being cut small. Reduce the heat to medium, cover the pot and cook for about 20 more minutes or until the potato is soft.

When the potatoes are cooked, remove the pot from the stove and with an immersion blender blend until you get a nice smooth and thick soup. You can leave some potato chunks if you wish. You are almost done. Add the frozen peas to the pot and season well. The peas will be cooked in no time.

Prepare two small bowls. In one pour some boiling water, in the other one ice cold water. Put the snow peas into the hot boiling water for 30 seconds and then transfer them in the cold water for another 30 seconds. That’s how they’ll stay crunchy and vibrant green. Then dry them on a paper towel.

The potato soup with snow peas is ready to serve. You can arrange the crunchy snow peas however you like or even serve them next to the plate.
