Pumpkin feta Flammkuchen

Pumpkin feta Flammkuchen combines nutty pumpkin, creamy feta cheese, colourful onions, slightly bitter walnuts and sweet honey. Enjoy the gorgeous combination of flavours and textures on a thin and crisp dough.

I love the classic bacon-onion Flammkuchen. However, sometimes I like to create new variations by combining tasty ingredients. And so it’s in this case, too. Pumpkin, cheese, walnuts and honey complement each other in a wonderful way.

What do you think of these colours? I like colourful food. Therefore, I combined some lovely winter colours, such as orange, purple, white and brown. In order to give even more colour and to create a wonderful contrast, I used red onion along with the bright orange pumpkin. I sliced it really thin and in a way that you see the onion rings. Beautiful.

After the creamy cheese, come the walnuts. Not only are they healthy but they bring that lovely crunch to your dishes as well. Walnuts are a wonderful addition to this recipe or to any of your meals in general. They taste especially great when combined with cheese and honey. Yummy.

Walnuts and honey are a great healthy combo

Moreover, when combined, honey and walnuts enhance each others’ properties and they have plenty of health benefits. As walnuts are rich in Omega-fatty acids (which are essential for optimum health) and have zero cholesterol, their primary benefits are in lowering high blood pressure and cholesterol, boosting the immune system (perfect during wintertime) and promoting a better cognitive function.

Make sure to put the walnuts at the end (as the last topping) on the Flammkuchen; just before drizzling them with honey. As a result, they can toast nicely. Also, honey doesn’t need to be a specific one, as long as it’s a raw one.

In addition, a piece of quick advice for you when slicing the pumpkin. I baked the pumpkin directly, without pre-cooking it. Therefore, try to cut it around 2-3 mm thick. The pumpkin slices will get tender by the time the dough gets crispy.

Ingredients for a pumpkin feta Flammkuchen:

  • 210 g whole grain flour (I used whole spelt flour)
  • 1 Tbsp of sourdough starter (optional)
  • a couple of pinches of salt
  • 2-3 Tbsp of olive oil
  • 300 g pumpkin (Hokkaido, sliced)
  • 150 g Feta cheese (cubed or crumbled)
  • 1-2 red onions (thinly sliced)
  • walnuts
  • honey

In a bowl, combine flour, olive oil, sourdough starter, salt and lukewarm water. At first, mix with a hand mixer and then, continue with your hand. Once the dough is smooth, form a ball or a flat disc and wrap it in plastic foil. Place the dough in the fridge to rest, for at least 30 minutes.

In the meantime, cut the pumpkin into 2 mm thick slices. Like that, it will be “cooked” at the same time as the dough. Then, you can either cut the Feta cheese into smaller cubes or crumble it, just before baking, directly on the dough.

Furthermore, preheat the oven to 250° C or at your ovens’ maximum capacity. And leave the baking sheet in the oven as well. In case you have a pizza stone, even better. Then, take the dough out of the fridge and roll it out (directly on a parchment paper).

Make sure you make it 2 -3 mm thick and at the same time in an oval or square shape. Next, lay the pumpkin slices, in a single layer, on the dough, followed by onion and the Feta cheese. At the end add some walnuts.

Last but not least, drizzle with raw liquid honey. Then, carefully take the hot baking sheet out of the oven and quickly, by dragging the parchment paper, place the Flammkuchen on it. Put the baking sheet back in the oven and bake for 12-15 minutes or until crisp.

Finally, serve the pumpkin feta Flammkuchen straight away when still hot and steamy. I simply cut it on a cutting board and served it like that. You can also serve it along with a salad or some delicious creamy dip.
